Triple Dipped Fried Chicken

Nice and crispy, the first time we made this I let my girls help with it. My twelve year old miscalculated the garlic salt and used one cup OOpps :) was way to salty to eat but we pulled off the skin and chicken tasted fine. The coating stayed on and it fried up perfect. I always fear making fried chicken because of the coating falling off. This one works great!

I used to use this trick a while back and forgot about it. Thanks for the reminder to boil first, it tasted like we ordered from a restaurant. Hubby even had to ask if I made them. lol

Easy Mexican Casserole

Everyone loved it! Hubby wants this over pizza night. I did add a can of rotel tomatoes with green chili med to the beef along with salsa. I added the right amount of chips and made sure they were crushed up well. Fast and easy to make. Made a taco salad to go with.

Basic Baked Spaghetti

I had to feed 10 people. I was out of lasagna noodles so I tried this recipe and added my own ideas. I used 2lbs of spaghetti noodles and made my sauce to taste for our family , i put a small amount of salsa and a can rotel green pepper and tomato mild sauce in with it which gave the noodles a nice light spicy taste . I also used cottage cheese and mixed with noodles and added parmesan, mozzarella and cheddar cheese to top. Now if i can only make it taste this good again. Everyone loved it! The noodles soak up the sauce. So I wouldn't go to light on sauce. Served with Salad and garlic bread.

Ham Bone Soup

Yummy!! Perfect for busy moms. Great way to stretch that left over ham. I added some carrots & potato in stead of just potato. The Tomato add a perfect flavor. I used reg canned chick broth, my ham & ham bone was a hillshire farm and those never seemed to be as salty to me. I also used garlic and bayleaf. No green pepper on hand but I am sure it would taste even better with green pepper. We had french bread with it. It was hit and I have 6 kids that loved it. Thank You!! Will be passed down to generations.

Beer Batter Fish Made Great

I added some lemon pepper to the flour mixture and also omited the yolk.. used about a half a beer. It turned out great!
