Lentil and Sausage Soup

Loved this! I was looking for a recipe that would make lentils more tasty to eat, since they're so healthy. I don't usually like regular lentil soup. This was perfect. I left out the water and made it more like a chili or thicker soup. Delicious! I will definitely be adding this to my dinner repertoire, especially in the winter months.

Eggplant Croquettes

I usually love eggplant but didn't quite like this one. I much prefer eggplant parm to this and I don't care much for eggplant parm either. Maybe I didn't like shredded cheddar with it. Mozzarella might be better or maybe no cheese at all would be good. Wasn't crazy about microwaving the eggplant either and it just didn't quite mash right or cook right. Might try again with variations....cause I really like the idea of making croquettes with the eggplant.

Festive Crab Cakes

This was a perfect appetizer for our last Thanksgiving dinner! The cranberry sauce tied it into the dinner very well and it was a total hit. I don't like green onions so instead, I put a couple tablespoons of horseradish into it for that extra zing.

Sicilian Meat Roll

Made this a few times and its a hit every time. A great twist on boring meatloaf!! I omit the tomato juice, though. And it doesn't seem to miss it! Don't like the taste of tomato juice in the meatloaf and tomato juice actually reacts badly with aluminum foil if you're using it. A great variation is to use smoked ham! Very tasty.

Stuffed Peppers with Turkey and Vegetables

I made this for dinner last night and am so enjoying the leftovers for lunch as I write! My husband is doing a low carb diet and this was a perfect meal for him (and me!). The filling was excellent. I agree the cooking times are off if you like your peppers very soft and not crunchy....the peppers just don't get soft enough and needed much longer to bake before filling. To reduce the baking time, I would blanch the green peppers next time in boiling water for about 5-7 min as was recommended by another reviewer. Then stuff them with the filling and baked for 15 min. I made some slight variations in the filling just because of personal preference: omitted onions and zucchini because we don't like them, used fresh chopped garlic, omitted tomato paste and used crushed tomatoes instead of diced. This tasted so great. Just make sure to use enough seasoning to your liking!! I also snuck some goat cheese crumbles into a couple of the peppers for variation. That was excellent too!

Beer and Soy Sauce Chicken

Really liked this one. I was looking for a beer marinade because I've heard beer keeps chicken very moist. This was great. I used the whole bottle of beer instead of adding water. I cut the soy sauce in half as recommended by other reviewers. Marinated only a couple hours and grilled. It came out excellent. Chicken was very flavorfull and moist. I made this chicken a second time with Blue Moon beer (because it was what I had on hand) and decided to add orange slices (as is done when drinking Blue Moon) to the marinade. This was a fabulous variation!

Clams Italiano

This came out great! I cooked the clams exactly to recipe. Then I made this into an entree by tossing some of the broth into cooked spaghetti and then topping the pasta with the mussels. There were tons of mussels left over so then we had second helpings the "appetizer" way...just mussels in the broth and then used bread for dipping. It was wonderful both ways. Will definitely use this one again.

Angel Hair Pasta with Shrimp and Basil

Highly recommended. This is one of my favorite recipes. I've added it to my recipe collection and have made it quite a few times. I always get a great review and many have asked for the recipe. It is really fool proof and comes out great every time. If I need to cut the prep time in half, I use ready cooked frozen shrimp (thaw them and add them to heat in the sauce at the tail end) and dried herbs (half the amount for dried herbs). This makes for a great quick gourmet meal.

Broiled Tilapia Parmesan

Great yet simple! Exactly what I was looking for. In place of the celery salt and onion powder, I used garlic salt...which also worked. I have added this to my "favorite recipe's" book.

Lover's Beef Burgundy Filet

I guess this recipe was too “hyped” up and I expected something spectacular. I was looking for a really special filet recipe for my boyfriend’s birthday, one that I wouldn’t use on a normal day. It was good and we enjoyed the filet, but it was not significantly better tasting than any other good simple marinade that I have tried. It mostly tasted like burgundy wine and soy sauce (a typical simple marinade). I don’t think any of the other ingredients made a difference.
