Stuffed Shells III

The flavor was amazing, and I'll definitely be making it again, though I think I'll take another reviewer's advice and layer the mozzarella instead of mixing it with the sauce.

Cheeseburger Meatloaf

I make mine very similar to this, my family prefers their meatloaf cheesy. I solve the grease problem with a very nifty meatloaf pan with a raised bottom to hold it above the grease while it's cooking. Makes getting it out of the pan easy too. (I had to buy two, one loaf is never enough!)

Bacon Chicken and Dumplings

This was amazing! We decided that it didn't quite qualify as dumplings, mine came out like chicken corn chowder with biscuits mixed in. But everyone in my house loved it, I barely had any leftovers. Will most certainly be making this again!

Beef and Cabbage Stew

This is wonderful as is, or as a base to start from. I usually double the broth and load it down with veggies. Since I prefer the carrots and celery to be soft I add them when I put in the onions. And I found out that the tomato sauce is optional when I forgot to add it and the stew still turned out excellent.

Savory Chicken Breasts

Anything my boyfriend actually likes automatically gets five stars! I threw in a few drumsticks because a couple people in the house prefer dark meat. Had to cook it longer that way, and the breasts got a little dry. So next time I'll have to put the dark and white meat in different pans. Great flavor, though. I mixed the melted butter with the (Italian seasoned) bread crumbs, got a nice overall golden color on the topping.

Yellow Squash Casserole

Loved this! I made it exactly as written, and it was amazing. I think i didn't drain the squash quite enough, and next time I may make extra cracker crumb/cheese mixture to make the kids like it more.

Layered Eggplant Hamburger Casserole

Do NOT sweat the eggplant first! I did, and even though I rinsed them completely, it turned out very, very salty. I still gave it four stars, because other than that, it was very good. Besides, my roommates love very salty food and gobbled it up! I will definitely be doing this again, but they'll have to add their own salt next time.

We loved these! They were pretty soft and squishy in the middle, but no one minded. A great way to use up bananas that are about to go bad, they don't require much effort to mash.

Amazing Muffin Cups

Yummy! But I'll definitely use cupcake liners next time, they stuck to the pan, even well greased. Just used about half a package of ground sausage, and I recommend putting the cheese in first, then pouring the eggs in. Also had to changes the ingredient amounts a bit, more eggs and potatoes and less cheese.

Delicious Ham and Potato Soup

I loved this, and even my boyfriend, who doesn't like soup, said it was good. Doubled the recipe so I'd have enough liquid in the pot to use a leftover ham bone. Only thing I'm going to change next time is adding a bit more liquid, it turned out too thick for me to really call it soup. It was almost as thick as a casserole. (Maybe I cooked to much liquid out boiling the ham bone?)

Creamy Au Gratin Potatoes

Wonderful! I took someone else's advice and sauteed my onions in a little butter and garlic. I prefer sweet onions, and it turned out delicious. I will definitely be making this again. And it's so easy, made with things you always have in the house, which is my favorite kind of recipe.

Cheese and Bacon Potato Rounds

Loved it. Thought the cheese was going to stick to my baking sheet, but the butter did double duty and prevented it. :) Tried it with sour cream, but we liked it better with ranch, the kind you mix yourself.
