Hasty Chocolate Pudding

I tweaked this a little...otherwise, I would have given it 5 stars! I'm always on the look out for quick, wholesome, single-serve snacks. I modified this recipe to fit my needs. I mixed 1T sugar, 1T cocoa, and 2t cornstarch in a small pot, whisked in 1/2c skim milk, brought to a boil over low heat, and added 1/2t vanilla off the heat. Ate it warm...yum!

Best Ever Muffins

A good starting point...I added 2 mashed bananas, 1t cinnamon, and 1t vanilla to make 24 mini muffins (for the kids). There was leftover batter to which I added chopped pecans to make 5 regular muffins (for the adults). My kids are already coming up with "add ins" for the next batch...

Mama Bear's Porridge

I love this recipe! As others suggested, I scale the recipe to one serving but add one whole egg. I don't add the butter, milk or honey at the end - but I like my oatmeal unadorned. My kids like the milk and honey, as well as the "Mama Bear" name!

Very good, although I'll probably only make this bread for Easter. A lotta work and a lotta bread! I'll cut the recipe next time, even though it made the right amount for our Easter dinner. It was just too much dough to handle at once.

Louisiana Shrimp Creole II

Super easy. Wouldn't change a thing - the spice is just right for me, and my husband just adds more hot pepper sauce at the table. Serve over white rice with corn bread on the side.

My whole family loves this bread! Good made with all white or half white/half wheat flour. I cook it on a very hot non-stick griddle. Make sure you roll out the dough as thin as possible! Great with spicy Indian dishes.

Chicken Tikka Masala

My husband and I thought this was very good. A little too "spicy" according to our kids. Served with peas (good mixed in with the sauce) and Roti bread (from this site). Ended our Indian meal with some Chai tea and Kulfi (also from this site).

Grilled Mediterranean Vegetable Sandwich

I can't figure out why everyone thinks this sandwich is so great. No wonder other reviewers added things like basil, red onion and cheese. It was not very flavorful as is. The bread got soggy even though I drained the veggies on paper towels before assembly. And why is it called "Grilled Mediterranean Vegetable Sandwich"? Nothing on or about this sandwich is grilled...

Eggplant and Pepper Parmesan Sandwiches

This was a good, quick sandwich. I couldn't find ready-made tapenade and didn't feel like making it, so I just spread chopped black olives over the goat cheese. The second time I had the sandwich, I toasted the bread under the broiler, too. I prefer the bread toasted, but it's good either way.

Addictive Sweet Potato Burritos

Loved 'em! The addition of the mustard and soy sauce seemed odd, but the burritos tasted great. I forgot to add the cheese inside the burritos, so I sprinkled it on top with some fresh cilantro. It made for a great presentation. I added the full cup of water...you just have to make sure the beans are mashed a bit and cook 'em long enough to absorb the water. I used sweet potatoes (not yams) and added them to the bean mixture before filling the burritos. Because I was skeptical of the recipe, I only made half (which made 8 burritos). Next time I'll make the whole amount!

This recipe is great and super simple! I chopped the onion and used whole milk and frozen lobster meat. No need to use cream or half and half, in my opinion.

Roti Bread from India

I can't believe how something so simple can taste so good! I used half bread flour and half white whole wheat flour. I halved the recipe because I didn't want lots of leftovers...I'll never do that again! Husband loved it with tandoori chicken and red lentil dahl. Kids had it sprinkled with cinnamon sugar for dessert. Yum!

Sweet Potato Pancakes

I would not make these again...even with modification. (I did't use the oil or molasses since they were optional.) My older kids didn't even like the look of them, my husband though they were just "edible," and I thought they didn't cook through to the middle even though the outsides were browned. The only reason I gave it two stars instead of one, is that my baby gobbled up two of them for breakfast!

Creamy Rice Pudding

Great way to use up leftover rice from takeout! I used brown rice, ultraskim milk, 2 T sugar & 2 T Splenda, egg substitue, 1/4 c raisins, and light margerine. It reduced the calories significantly, but it still satisfied my craving for sweet, creamy, comforting food!
