Lemon Cupcake with Blackberry Buttercream

These mini-cakes were wonderful. Next time I will skip the icing, no need at all. I cooked them the day ahead for a party and ate 3 right away before I iced them. I had to wrap them up tight to keep from eating more. The second day they weren't as good though. I added lemon extract and vanilla extract. Next time I will cut the vanilla way back to maybe 1/2 tsp. and make a lemon glaze. I WILL be making these again... and again.

Simple Scones

Yum! I added orange flavoring to the the sour cream and used cranberries. Delicious. Next time I will buy an orange and grate the rind in the dry mix.

INCREDIBLE Raspberry Cheesecake Cookies

Great cookies. I used the raspberry flavoring and they were great. They didn't store well in an airtight container though. Next time I'll just leave them out.

Eggnog Quick Bread

I loved this, the eggnog flavor is wonderful. I added the extra eggnog and extra nutmeg like some of the others here. It was easy and delicious.

Best Steak Marinade in Existence

I used this marinade for a whole chicken. I put a double batch of the marinade along with the lemon rinds in a ziploc bag with the chicken for 48 hours. I removed the chicken and rinsed it off well, added the lemon rinds inside the cavity, seasoned with rotisserie chicken seasoning and baked. So delicious!! The white meat was extremely juicy and tender. The flavor was great!

Coco-Cola Cake II

MARSHMALLOW ISSUES: For those of you that are having trouble with the "marshmallow" part of the recipe, it is written right. Instead of offering revised recipes, you should try it how it's written first. The marshmallows float to the top melting over the chocolate cake giving it a chewy brownie like crust. If you're fishing the marshmallows out or melting them in the recipe, you're missing the best part of this cake. Make it like the recipe says and you'll be calling it "crack cocaine cake" like I do. It's addicting. My absolute favorite chocolate cake ever. Thank you sassy!!! Amended to add - I just made the cake again today for my husand's birthday as it is his favorite. I added an extra cup of marshallows too. Chewy delicious crust!! So so so good.

Banana Banana Bread

I baked mine in mini loaf pans. It is the BEST!!! If you want to add a little something extra to any banana bread, slice it thin like for a sandwich and spread some brown sugar/cinnamon or strawberry cream cheese on it. This banana bread is great!

Rave Reviews Coconut Cake

This cake is wonderful! I substituted coconut cream pudding mix for the vanilla and coco loco coconut milk for one cup of the water. I actually forgot to add the vegetable oil. It was so delicious. I don't care for coconut much but the toasted coconut was wonderful! My niece said it was the best cake she'd ever eaten.
