Chicken Milano

My husband nearly licked his plate! I used chicken stock instead of broth and steamed the chicken for a healthier version. If your lactose intolerant, you'll need a few Lactaid pills to combat the heavy cream. I served the dish over gluten-free noodles and it was fabulous! Very few foods get five stars, but this one was worth it!

Fish Fillets Italiano

My husband liked this dish, but I felt it needed something more. I served it over gluten free penne noodles. It was a light dish, which I liked, but it just needs a bit more flavor to make this a meal I would cook againt.

Cowboy Caviar with Lime

This was a flavorful salsa/pico to make! I changed a few things: I added 1/4 cup more cilantro and jalapenos and squeezed a whole lime into the mix. I used Wishbone Robusto Italian (gluten-free) this time, but making your own vinegar/oil based Italian dressing works well too. I'd add more tomatoes next time for sure. In the summer, I will make this with all fresh vegetables. This was a great recipe that looks wonderfully colorful. Thanks for sharing!
