Cinnabon® Cupcakes

I thought the recipe was great...feels kind of complicated, though...but I can't really see another way to shorten the process. For those with brown sugar/butter issues : it takes several minutes. It's not an instant reaction. You need to stir longer than 2 minutes. I have made syrups & caramel enough to know it will eventually dissolve...and I don't keep my heat too high to prevent burning. It goes from okay to not okay really fast.

Slow Cooker Split Pea Soup with Bacon and Hash Browns

I followed the directions to a T. 12 hours after first turning it on - I still had crunchy peas. I added more liquid (though that didn't seem to really be an issue in the first place, but I thought it might help), and another 12 hours go by - CRUNCHY PEAS. I've turned the heat up on the crockpot to high, b/c I think that might be the only way to fix it. I don't want to waste the ingredients by throwing it out. It's useless as it is now, though. I had been keeping it on low b/c it was not being supervised (first, away from the house for 8 hours, then overnight while we slept). Now that I'll be home to watch it all day, I will see if high helps. If not - I may have to change my review to 1 star. I only gave it 2 so far b/c the flavor & idea of the soup is okay - the problem was execution.

Winter Root Vegetable Soup

This has a good flavor and I like the combination of veggies. Some problems I ran into: Butternut squash roasts to fork tender much more quickly than some of the other things being roasted! So, by the time I had everything soft, some of the veggies had begun to crisp & brown! Once I started to puree, it became more "mashed veggie" consistency than soup. I added more broth, ran out of veggie broth...and moved on to chicken broth! Maybe I had more veggies than called for? I dislike amounts like "3 carrots" instead of 3 ounces, or 2 cups. The carrots I grabbed were the smallest in the bag, but still larger than others I've bought (farmer's market veggies vs. store veggies?)! My sweet potato was kind of large, b/c the alternative was 2 very small ones & I thought the big one looked nicer on the outside. So, maybe I had too many veggies, in the end I just added more liquid to help boost it...but I do think this could use some more herbs.

Squash with Tomato and Feta Cheese

This was AWESOME! I didn't adjust anything, I did it exactly like the recipe called for. I used an 8X8 dish, which seems "small" to me rather than "medium". I got out a 7x11 at first...but I knew it would be too thin a layer. When I make this again, I will probably use a little less of the stuffing.

Banana Butter Icing

This is excellent as a base. I have experience with icings, so just from looking at the recipe, I knew I would want to adjust it a little. I used more butter, less sugar. And it might be nice if you did just a tiny dropper of yellow food coloring if you aren't going to immediately eat whatever it's been frosted on.

Sour Cream Chicken and Potatoes

I wish I could have done half stars, cuz I really ALMOST liked it 4. This was a very dry dish, sour cream is not liquid and made very dry mashed potatoes. I added a splash of milk in the mixing process b/c I worried if I added too much another step might add liquid that I wasn't counting on. The spinach stuff didn't want to puree in the food processor, so I added a little olive oil to let it smooth out. It *does* need a little salt & pepper (and I am usually the last person EVER to add salt to a dish), maybe in the potatoes or tomato/spinach mixture. The cheese in the t/s mix ended up burning slightly while the chicken cooked, maybe next time the parm can be sprinkled on the finished dish. Otherwise I did like the flavors and with a few tweaks this can be 5 star. :)

Good recipe, but a little off on the servings. No, it's not ideal to bake a cake in glass like this, but if you want to share it long-distance you don't have a lot of options.

Crazy Crust Pizza Dough

This was okay. The baking times seemed to be way off. I checked my crust at 16 minutes and it was already done with the edges getting VERY dark. I sprayed it with some olive oil before I put it back to melt the cheese. I used all the exact measures in the recipes. It did taste a little eggy. I did not have a pizza pan with an edge, so I used a 9x13 pan. It seemed to be a good size. If I do this again, I think I might use a 9 inch round pan...so the crust is thicker. And I might take the suggested of a single egg from other reviews.

Homemade Pancake Mix

I had a small issue that was unrelated to the recipe itself...but I scaled it down to 4 instead of 16 servings. It was only going to be my daughter & myself having pancakes, I didn't want to have a bunch of leftover pancakes or leftover mix. Anyway, the only scaling issue was that it said "1/4" of an egg. HA! So, I made the scaled down version, and used 1 whole egg, and enough milk to make it the right consistency. I did not have any whole wheat flour, so I just used all purpose for both measurements. B/c my daughter is a big CHOCOLATE fan, I substituted 1/4 cup of cocoa powder for 1/4 cup of flour. I was worried I would have rubbery pancakes b/c of scaling it down, but it turned out really well & they were nice & fluffy!!

Basic British Scones

I love this recipe, but I throw caution to the wind & use real butter. :) They are so fast to make. Even though there are recipes specifically for the addition of berries & such, I just add dried cranberries to this recipes towards the end. They taste best when they are still warm. I have added them to many tea parties over the years.

Slow Cooker Enchiladas

This was really excellent. I made it exactly the first time and it was really good. I needed to make it again for a sort of last minute family meal with my parents. I am never sure how many people will be at my parents house (siblings, their significant others/spouses, etc...) so I wanted to make more than the recipe called for. I added a big can of black beans to the beef, and used 2 taco seasoning packets. I did double layers with the tortillas, and I threw in some extra cheese (I bought a big bag, and just used it all, rather than having a handful left over). It was REALLY good with the addition of the beans. Turns out we had a ton of leftovers, though, b/c it was only my dad, my hubby, toddler, & myself who ate. The leftovers were still really good the next day.

Smooth and Creamy Peanut Butter Pie

This recipe is awesome! It's got the least ingredients of all the other pies I looked at, and it is SO easy to make. I made it exact the first time, my family said it was "too sweet". (As if there were such a thing...but they are not that into sweets & when they do have them, they tend to think they have more sweetness than other people.) When I made it a second time, I cut the amount of sugar in half. Still "too sweet" for some family. I cut the sugar all the way down to 1/3 cup. Just right for them. AND, it still tastes sweet to those who DO eat sweets a lot & like the sweetness. I also changed from regular peanut butter to "natural" peanut butter on the most recent pie...and I think that toned some of the sweet down also. The *only* reason I changed the sugar amount originally was b/c of my family. I love the original...and I like the less sugar versions I made also.

Mexican Shepherd's Pie

This recipe was so very cool! I might start toppig other casserole dishes with cornbread! The only reason this isn't a 5 star rating...is because the amounts seemed a little off...I would probably use 2 boxes of cornbread mix for the topping....and less corn than called for.

Black Bean Medley

I tried this with the submitter's suggestion of using salsa instead of tomatoes, b/c I don't like stewed tomatoes. I just used a basic, mild salsa (one I normally buy & enjoy with tortilla chips)...and it was horrible. Maybe the stewed tomatoes give it a different flavor? It was easy to prepare, and I liked the base of corn, beans, peppers, onions, & garlic. If (and it's a BIG "if") I do this again, I will try to season it myself. Maybe some cumin & cayenne or crushed red pepper? And like another reviewer suggested - fresh tomato.

Eggplant Parmesan II

My mom makes THE best eggplant parm ever...so I can't rate this a 5. But it WAS really good. My husband loved it - and he is Mr. If-there's-no-meat-I-don't-eat. :) I would suggest a slightly longer cooking time though when baking the eggplant. Some did not quite get cooked all the way through. I thought they would cook more once the whole dish was in the oven, but only the ones closer to the bottom did. So the top ones were a little crunchy, but were fine the next day when I microwaved leftovers.

Flounder Florentine

My hubby and I really enjoyed using fish this way. We like fish, but it gets a little old just throwing it out on the grill! I do think that there was a LOT of spinach. Maybe next time I will cut out some spinach. (Limit it to a pound - like the fish?) I really enjoyed the sauce that was poured over the fish. I may actually use that for other recipes as well. It was hard to get the sauce & the spinach together...b/c the sauce was right on top of the fish and the spinach underneath. So, if the sauce didn't touch the spinach, it tasted a little bland - being JUST spinach, ya know? Not a bad recipe by any means...but I think next time I will make some adjustments.

Brown Rice and Black Bean Casserole

My husband LOVES this! And I have a harder time getting HIM to eat his veggies than I do with our 3 yr old. I love the flavors, I love the blending of such different ingredients...and when I first saw it, I really thought it might be weird. The only part I didn't like was the prep work. I suppose if I used leftover chicken from another meal, that would considerably shorten my prep time. But I tend to cook for EXACTLY who needs to eat, with very little leftovers. And I really couldn't see there being 2 whole leftover breasts from any of our meals! I am actually pregnant right now & have been directed by my midwives to have some sort of hearty meal with plenty of protein & complex carbs (yay for brown rice!) ready to eat after I deliver. I am going to make this & freeze it. I wish there were MORE stars to rate with!! It is TRULY a fabulous blend of food groups & flavor!
