Asparagus and Smoked Salmon Salad

This is a fantastic salad with very healthy ingredients. I use baby spinach instead of red leaf lettuce, and toast the pecans. I will make this again and again!

This was pretty good. I used rotini instead of macaroni, doubled the dressing, and used olives and green peppers rather than broccoli. I also skipped the mozarella but upped the parmesan. I didn't really like the cherry tomatoes in there... might leave them out next time and add another bell pepper.

Sesame Pasta Chicken Salad

This made a very easy lunch meal. I used canned chicken to speed up the preparation, which was fine, but I'm sure it would taste better with freshly cooked chicken. Adding snap peas was an excellent idea.

Lentil and Sausage Soup

We loved this. I used mostly chicken broth and used slighly less liquid than called for. I also used spicy sausage and added a little cayenne pepper. It makes a ton!!!

Beaker's Vegetable Barley Soup

My husband and I loved this. We made no changes, except I made it in the crockpot... on low for about 9 hours. Served with a loaf of crusty bread. Yum!

Savory Garlic Marinated Steaks

This was great. I think this marinade would be good on a variety of different steaks, although the prime rib-eye made for a special treat. We marinated for over a day and the meat was so tender. I didn't even need steak sauce.

Double Layer Pumpkin Cheesecake

This was pretty good. I increased the cheese cake layer and the amount of pumpkin and spices. I also made a crust out of ginger snaps which was yummy.

Savory Crescent Chicken

I added bacon pieces and chives instead of an onion, but this was still very bland, especially considering how many calories there are. It definitely needs more flavor, but the idea is good... maybe herbed cream cheese? Ranch dressing? I'm not sure, but it was definitely missing something.

Charley's Slow Cooker Mexican Style Meat

This was delicious... I used in chimichangas, which were great! The meat can also be frozen and used in a variety of dishes. I did add cumin as well.

Denise's Peanut Chicken

This was really good. I did double the sauce, added about 1/3 cup chunky peanut butter instead of peanuts, marinated the chicken in soy sauce and cayenne before cooking, and served with vermicelli rice noodles (found in the Asian section of the grocery store)... very good! We squeezed lime on top. Yum!

Baked Havarti Chicken
