Chocolate Fudge Pound Cake

This was very good and had a very nice rich flavor, however it lacks the texture of a pound cake. My daughters called it a "brownie-cake" it had a very similar taste to brownies, however a lighter, more moist texture. It did rise more than I anticipated, and I did make some cupcakes. Next time if I make cupcakes I will fill them lower than usual as it overflowed a little and they did not rise with a mound in the center like regular cupcakes.

Fudge Truffle Cheesecake

Happy to find this recipe (I've gotten on the eagle site before) here! Wow, this cheesecake is excellent. Using a high quality chocolate it's just as good as the Godiva Cheesecake from the Cheesecake factory!

Eggplant Parmesan II

I thought this was OK, though the kids were more of a fan of the cheese and the sauce than the eggplant. I served with a side of pasta. Don't know if I would make it again.

Easiest Peanut Butter Fudge

I tried this one when I didn't have the marshmallow creme needed for another one, and honestly this was only so-so. I thought the texture was too crumbly and dry. So far, out of the peanut butter fudge I've tried on this site, World's Best Peanut Butter Fudge is the best. That recipe is so creamy, smooth and melts in your mouth. The brown sugar in this recipe I feel makes the taste of the fudge a little too strong. The other recipe very much resembles what I used to buy when I worked in Northern Michigan on Mackinac Island which is known for fudge. I think I'll stick to that one from now on!

Caramel Popcorn

I had very easy prep for this, I popped porcorn and measured and placed it into my large stainless extra deep lasagna/roasting pan which I had sprayed with non-stick spray. Kept the popcorn warm in the oven as some had suggested. Made the caramel mixture, poured and stirred to coat directly in the roasting pan. Then baked as stated for one hour! Surprisingly easy! Clean up was super easy, just soaked the pot and pan for a few minutes!

Candy Coated Pecans

I rated the recipe as written, but I have since made several changes which in my opinion has improved the flavor/texture. Double the topping and use half white/half brown sugar and add a generous teaspoon of cinnamon. Bake at 300 degrees for 30 minutes. When it gets out of the oven I did sprinkle with a little bit more cinnamon sugar, but it probably doesn't need it. Super crunchy and impossible to resist! I have to hide these from the kids and my husband so we don't eat them all the first day!

Pan-Fried Asparagus

Halved the oil and butter and it was plenty, decreased the salt to about 3/4 teaspoon also used three very large garlic cloves that I minced and added at the end. So simple and perfect!

Magic Mango Bread

I made this as written however I mashed the mangos with a fork and baked them at 350 degrees for about 30 minutes. Super moist, very delicious, very much like a buttery, slightly fruity cinnamon taste. I know other reviewers though they did not rise enough, but I thought the texture was exactly as a quick bread should be, moist and dense.

The Rated R for Richness Chocolate Cake

I've baked my share of chocolate cakes and this by far is at the top of the list. Having a large family, I'm always looking for ways to decrease the preparation time and increase efficiency. I used the microwave and also didn't bother to chop up the chocolate, rather just stirred the individual chunks until melted. I baked it in a 9 x 13 inch pan for 33 minutes and it was perfect. Frosted directly in the pan. Tastes even better the second day and we love it even more cold from the fridge when the frosting is super fudgy!

Chicken Chili Soup

I was a little surprised at how good this soup was! A bit more red pepper taste than I expected, but it really worked wonderfully with the chicken. My children loved it too! I served with a little sour cream and some cheddar, while I ate it as is to save some calories.

Vanilla - Chocolate Powdered Sugar Frosting

Made it as written, and it was fine. However, then I adjusted it by adding another cup of confectioners' sugar and some more milk. I found that reduced the stronger butter taste. Before it was a bit too greasy of a texture.

Buttermilk Pound Cake II

I've made better pound cakes off this site so I'm giving this 4/5 stars. It tasted good, nothing spectacular. Definitely, if I made it again I wouldn't add lemon extract. The lemon extract made the whole cake taste a bit fake. I would have rather doubled the vanilla extract, which I may do next time if I try this again! Though, for the purpose that I made it for it was fine. I used a 9 by 13 pan, cooked for about 45 minutes, and frosted it with some buttercream and topped with fresh fruit in a flag motif.

Soft Chocolate Chip Cookies II

I made this recipe as written. I usually prefer the big fat chocolate chip cookie recipe from this site for my baking, however this time I was going to make cookies for a school function and I wanted something softer, a little thicker and chewier than that recipe. These definitely did not disappoint. They are also a bit sweeter than the other recipe, and a bit more kid friendly than the super rich all butter cookie.

My Crab Cakes

Peanutty Caramel Bars
