Broiled Parmesan-Lemon Tilapia

This was awesome. HurdBird admitted having licked the plate, I sopped up every dab left on my plate and then scrapped up all the little curmudgeons off the foil before throwing it away. The only thing I'll change next time is we will have a nice glass of White Wine with this dish! I had no idea what Sazon was. So not having it, I used Durshi's homemade recipe and it turned out great. Thanks Durshi!

Chocolate Chip Meringue

I made meringue for a banana pudding. Had extra. Quickly found this recipe, added 1/8 Tsp vinegar and 1/8 tsp vanilla extract to the left over meringue. Threw in 1/4 chocolate chips. Turned out excellent. Hubby loved them. Since they are made of egg whites, I put left over in frig. Became very gooey still good. Anyone tell me why they got so gooey after I put them in frig?

Baked Dijon Salmon

Yum, yum! This was one of the best salmon recipes I've tried. Hubby liked it enough to ask what the marinade was. It was soft and moist. Just scrumptious.Goes on my regular rotation.

Old Fashioned Coconut Cream Pie

My husband loves coconut cream pie. I made this one for him this Christmas. It turned out awesome. I think it was the best we've had in many, many years. I know it was the best I've ever made and thanks to all the info I gleaned from Allrecipes, my "high altitude meringue" was literally the icing on the pie. :)

High Altitude Meringue for Pie

Thank you, thank you, thank you! I have never had any luck with meringue whether we lived in high altitudes or not. I do live in a fairly hi altitude now so after reading a number of comments and the article in Allrecipes on meringue, I decided on this one, It turned our perfect. It has not shrunk, wept or turned to candy. I am a happy meringuer!!
