Creamy Chicken Lasagna

Reviewed: Apr. 2, 2011
This is really good and really easy...However, it definitely needs some seasonings! Maybe mix in some traditional italian seasoning with the chicken, cream cheese and 1 C. mozzarella. I used a 9 inch square baking dish and it was the perfect size. I will try another reviewers suggestion of adding a layer of spinach next time as well.

Easy Spicy Chicken and Rice

Reviewed: Nov. 30, 2010
Good idea, but the flavor was pretty blah...even with the rotel. The chicken was visually unappealing as well, so if I make it again, I will definately brown the chicken so it doesn't look so pale when I serve it. It needs a little something more...adding some veggies might do the trick.

Cranberry Sauce

Reviewed: Nov. 30, 2010
I make this every year for holiday meals...I like my cranberries tart and this fits the bill! However, I do end up adding about 1/2 C. more sugar to suit the rest of my family....

Superior Hotdish

The search for the perfect Goulash recipe is over! I've made it 3 times for my family and they absolutely love it! I made no changes to the recipe....It is perfect the way it is.

Banana Bran Muffins

Reviewed: Nov. 30, 2010
After many failed attempts making a banana bread that is done in the middle but not burnt on the outside, I decided to make these muffins. They are fabulous! All the banana bread flavor without the long baking time and gooey middle. They freeze great for a quick weekday breakfast! I'll never make banana bread again...

Wild Rice Spaghetti Chicken

Reviewed: Nov. 26, 2009
we just didn't like this...it was so brothy and didn't have much flavor. i love the idea of wild rice and spaghetti together, but it needs to be creamy for our taste. also, i used actual wild rice, not from a mix. that was a long cooking process and i think using the wild rice mix (like uncle bens) would have been easier and yielded a much better overall flavor--might have helped with that brothy issue.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 22, 2009
This was soooo good! Instead of the water, I used a can of cream of chicken soup. It had the perfect consistency. I also added a can of rinsed black beans during the last half hour of cooking time. I added Tapatio hot sauce to my serving to make it a bit spicier. I used regular tortilla chips since I was short on time, but I will make my own tortilla strips next time. I'll definately be making this often this winter. Thanks for sharing the recipe!

No Sour Cream Beef Stroganoff

Reviewed: Sep. 21, 2009
It tasted like hamburger helper--that's fine at least I know what's in it! But it was so visually unappetizing that I could not finish eating it. Really pale, white and grayish. I don't know how the above photo looks so good--maybe they left out the flour?

Alienated Blueberry Muffins

Reviewed: Aug. 29, 2009
I had a bunch of blueberries to use up so I tried this recipe based on reviews. I can't figure out what happened, but mine are flat as a pancake and sunken in the middle. And I used new baking powder. Despite flouring the berries, they are all stuck at the bottom. They taste fine--not fabulous--but definately not presentable to anyone besides my family.

Pumpkin Bread IV

Reviewed: Aug. 29, 2009
Wow this is awesome! I used baby applesauce (finer texture) for half of the oil. I think next time I'll only use mini loaf pans because I can't seem to get the timing right on a regular loaf pan...either too done or not done enough. The mini ones come out perfect. A lot of sweet breads end up being too oily for me and this is just perfect, moist but not greasy feeling.

Christmas Breakfast Sausage Casserole

Reviewed: Feb. 21, 2008
I got several request for this recipe when I brought it to our MOPS meeting! I used 8 eggs, and added 1/2 tsp. black pepper and chopped green pepper. Yum! I think the toasted bread makes all the difference. This is the only breakfast casserole I will ever make! Thanks for sharing!

Spicy Garlic Lime Chicken

Reviewed: Jul. 3, 2007
Awesome!! A bit too spicy as I used the entire seasonings on only 2 chicken breasts...but having that much seasoning made for a great "crust". I will cut the salt and cayenne next time, though. I agree that there needs to be more sauce...I had none to spoon over when ready to serve...the lime juice adds such a flavor kick! I used olive oil only when sauting and didn't miss the butter at all. I will definately be making this again and again...I'm going to try this for chicken fajitas--use the seasoning mix on the veggies, too then drizzle some extra lime juice over the veggies before serving. Yum!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Aug. 21, 2006
Awesome cookies! And I have a hard time finding cookies I like. If you use butter flavor crisco instead of butter or margarine, you won't have that spreading problem. The cookies stay in a uniform shape and are still chewy. I made the following changes based on other reviews: 1 1/2 C. flour, 1 t. baking soda, 3/4 t. salt. I added about 1/2 cup more oats (I used the old fashioned kind), 3/4 c. chocolate chips, 1/2 c. rice crispies, and 1/4 C. coconut--my family loves coconut and omitted the nuts because I didn't have any...I would try pecans instead of walnuts because I think walnuts have a funny taste sometimes. I will definately make these over and over!

Garlic Cheddar Chicken

Reviewed: Aug. 13, 2005
this was just okay...way too much garlic for our taste and the cheddar was still too sharp even though I used mild cheddar.

Tamra's Lemon Artichoke Pesto

Reviewed: Aug. 13, 2005
This is awesome pesto! I'm not a huge garlic fan, so I cut the garlic down to one large clove and it still had a nice garlic flavor. I also added cooked, shredded chicken breast. Yum!! Thanks for the recipe!

Angel Hair Pasta Chicken

Reviewed: Jun. 16, 2005
I was very disappointed because I was looking foward to serving a more healthy pasta dish...This had absolutely NO FLAVOR at all. Plus, there was way too much angel hair pasta for the amount of veggies and sauce, though I wouldn't call it a sauce...

Mary's Pecan Crusted Chicken

Reviewed: Jun. 16, 2005
The chicken came out very moist, but we thought the cinnamon flavor was a bit much for a main dish, plus it just needed some zing with all that cinnamon. I think it would be much better in a salad instead.

Steak and Spinach Salad

Reviewed: Jun. 10, 2005
this was good and i added the gorgonzola and ken's raspberry dressing from other reviews...i would not use that dressing again-way overpowering. i will use a lemon balsamic vinagrette next time and candied pecans (personal preference). my husband really liked this and he was quite skeptical of a steak salad.

Wild Rice and Asparagus Chicken Breasts

Reviewed: May 30, 2005
My husband and I love this quick yummy meal! I boil my chicken breast and shred, then add to the asparagus and sauce mix and serve over whatever rice I have on hand. You can't beat how fast this comes together! I've made it with frozen sugar snap peas too and it's just as good.
