Johnny's Biscuits

Reviewed: Aug. 31, 2014
This recipe was easy but not sure what "very wet" meant. I thought it was too wet. I did have to substitute buttermilk with milk/vinegar combo. I thought this is why it came out way too runny. So, I added a bit more flour. Biscuits did have great texture and flavor. I do plan to stick to original recipe next time. Will keep this one as favorite.

Carrot Pineapple Cupcakes

Reviewed: Apr. 21, 2014
Boy were these a big hit with my family. I always read reviews and make changes as needed but this time there were not many suggestions. So I left recipe as is and boy I was sure glad I did. Not sure what fuss was about the rise. Oh, I did fill about 3/4 full I felt that was perfect. They are so very most you will enjoy them. Recipe made exactly 14 using ice cream scoop.

Creamy Au Gratin Potatoes

Reviewed: Dec. 25, 2013
The only reason I am giving this a 4 star rating is because of the difficultly, time and mess it takes. Is it worth it it, YES. One other review said homemade, comfort and I agree. Nothing too fancy but just right. I did tweak this quite a bit. I boiled my sliced potatoes in salted/seasoned to tastet water for about 5 minutes to absorb the seasoning. I also minced onions and sautéed them in the butter until translucent then added flour etc. the rest was the same. I also took cathyM advise and used 3 different cheeses only because that is what I had on hand. 2 cups mix of cheddar and 2nd cup of Mexican blend cheese. I also topped with French fried onion. Only had to cook for 1 hr. You may want to cover if you don't want French fried onions to burn. Perfect! Will do this again.

Chantal's New York Cheesecake

Reviewed: Dec. 25, 2013
I followed recipe to the tee. It came out perfect. I will definitely be making this again. I added can of pineapple pie filling as topper along with whipping cream and cherries for looks. It belonged in magazine. Oh yes, I do believe in the water bath while cooking.

Oatmeal Pancakes II

Reviewed: Dec. 25, 2013
I love this simple recipe. The only thing I do different is to grind oatmeal in blender first and then add all dry ingredients mix together then add wet. It does seem runny to me so I end up adding about 1/4 cup more flour after mixing ingredients. For Christmas I added tsp of cinnamon and my son wanted chocolate chips so added during cooking. Love texture and consistency of batter. Yes, taste great.

Gourmet Caramel Apples

Reviewed: Dec. 7, 2013
I just made these first time making caramel apples. It was so easy and did not take long. I do bake often. So, if you do not then you may think this takes long or too many steps. I've learned if you don't skimp on buying good caramel and good chocolate it makes things delicious and easier. I did give this a four star only because the caramel did droop to the bottom a bit. So, my nuts were at the bottom. Thank you for a great recipe my family and I will use from now on.

It was probably my doing but a bit gooey runny. Not sure if I put slightly bit more milk or did not cook enough time. My first try but boy oh boy perfect flavor no need to adjust there and so super easy. Thank you

Salisbury Steak

Reviewed: Feb. 17, 2013
We just had this for dinner. My whole family enjoyed this very much. Easy to make and easy to put together. I didn't have condensed onion but had it dry onion soup mix and substituted can of cream of mushroom. Mixed half of onion soup in meat mixture and half with gravy mixture. Honestly next time will leave out ketchup, did not care for the twang it gave (personal taste). All around definite 5 star.

Sausage and Apple Breakfast Casserole

Reviewed: Feb. 10, 2013
I enjoy cooking more when the recipe is easy to follow and all/most ingredients on hand. This recipe was so easy to put together and my family loved it. I did not have French bread but used what I had, whole wheat, and it stood just fine. I also cut recipe in half and had no problems. I also took advice from other reviews and allowed it to sit a bit longer and added walnuts.
