Avocado Feta Salsa

Reviewed: Jan. 20, 2009
Every time I make this, I have to double it because it is always the first thing gone on the appetizer table. Thanks for the great recipe!

Apple Butter with Honey

Reviewed: Nov. 11, 2005
I'd make this again in a heartbeat! I did as the other suggested and used a quarter of the amount of allspice and cloves and half the amount of cinnamon. I made two batches (both tripled) and found the first batch to have way to much liquid so I added more apples the second time around. I still had to drain some of the liquid before pouring into my jars. I'd cut back a bit on the cider next time OR use more apples. I used a combination of Gala and Fuji apples and this recipe has a delicious flavor. My family and neighbors thank you!!! The honey is the perfect ingredient, so yummy!

Hannah's Cream Cheese Caramel Apple Pie

Reviewed: Oct. 16, 2005
This was indeed a very good pie and quickly devoured by everyone! I made some changes based on the other reviews and the pie came out perfect. I like cinnamon so I did not change any of the spices, for me it was perfect. I cut the cream cheese and the powdered sugar in half (I had to heat the cream cheese in the microwave for 20 seconds to soften enough to blend with the sugar) Also I used 8 cups of sliced apples rather than 6. This way the filling was not so runny. I didn't have the turbinado sugar so I simply sprinkled the top crust with a bit of cinnamon and sugar. I used a deep dish pie plate and increased the baking time by 10 additional minutes due to the extra apples. It did not leak or run over on the cookie sheet at all. In fact it baked to perfection. This is not a pie to serve right out of the oven, let it sit for about an hour to allow the filling to thicken. I'll be sure to make this again, thanks for the recipe! This might also be a great pie to add a crumb topping too like a dutch applepie. A mix of oatmeal, nuts, flour, brown sugar and butter would make a delicious addition to this yummy fall treat.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Reviewed: Sep. 16, 2004
This was an awesome recipe. I added chicken and instead of Roma tomatoes, I used a can of Rotell (Italian style) to add a bit more flavor. My family LOVED it and we will make this again for sure. Thanks so much!

Eggplant -- Easy, Good and Tasty

Reviewed: Apr. 5, 2004
I thought this was delicious. I've never made eggplant before and for some reason thought it was so hard. I used canned petite diced tomatoes instead of sliced and I mixed them with half a jar of marinated artichoke hearts chopped very small. I baked for 7 minutes, flipped them and added the toppings and baked for another 9 minutes. My husband loved them and I'll for sure be making these again. Thanks for the recipe!

Blue Cheese Beef Tenderloin

Reviewed: Apr. 1, 2004
I'm a blue cheese lover and I didn't care for this sauce, it seemed to overpower the delicious marinade. I let my steaks soak for about 4 hours and then grilled them, they were perfect. I'll use the marinade again but never the sauce.

Fettuccini with Mushroom, Ham and Rose Sauce

Reviewed: Mar. 31, 2004
A very different pasta recipe. The crushed red pepper made it a bit spicy for my husband and daughter but all in all we really enjoyed it.

Tuscan Soup

Reviewed: Mar. 31, 2004
I thought this was great but I did make some changes. I wanted a bigger pot so I used 9 cups of broth, 5 pieces of sausage and 12 oz of evaporated milk. Also I'm all about easy recipes because I have a toddler so instead of peeling and dicing potatoes I used 2 bags of Simply Potatoes. It turned out great and I served it in bread bowls. For my toddler I cooked up some pasta for her and added some of the soup and some shredded cheese, she loved it and the added pasta made it easy for her to eat off of a spoon without much mess. Next time I may add a can of petite diced tomatoes for color. All in all a great recipe that I'll be sure to make again.

Chicken Savoy

Reviewed: Mar. 29, 2004
My husband keeps asking me where I'm getting all these wonderful recipes! This dish was wonderful. So juicy and tender. I used boneless, skinless thighs, about 2 lbs worth and I added more romano and balsamic. I was out of orengano so I used thyme instead. I'll be making this for years to come. Thanks!

Seared Tuna with Wasabi-Butter Sauce

Reviewed: Mar. 26, 2004
I had to add another comment, I made this sauce again only kept the scallions and added a red pepper to the saute mix. It made it a little chunky. At the end I added a splash of lemon juice and then spooned it over red snapper fillets and broiled them. Delicious and the family loved it. Thanks again.
