Pad Thai

As close as you'll get to Thailand's own. I followed others' suggestions doubling sauce, and added 3 cloves minced garlic and 1-2 T lime juice.

Golly Gee Gluten-Free Pancakes

One of the better options. Based on my kitchen inventory, I used 1/4c+1t cornstarch in place of arrowroot and sorghum instead of amaranth. They are a little flat and best if eaten immediately. My 6 y.o. gave them two thumbs up.

Angel Food Cake III

Loved it. I never had to beat egg whites like this before - literally took more than 10 minutes. When you do mix the egg whites use the largest bowl you have. My standard large glass bowl overflowed. Freezes beautifully.

Gluten-Free Yellow Cake

Solid recipe. I put the batter all in one pan in hopes of making it "rise" higher but failed terribly. Made it again (and just had smaller rise )since the reviews were all so good. It is a keeper.

Gluten-Free White Bread for Bread Machines

Surprisingly moist. After reading other reviews, I added a cup of flour to the mix. When I checked on the kneading process it looked quite dry so I added more buttermilk. It still tasted very good and met with my 6 y.o.'s approval. Next time I'll do recipe as written (again replacing soy flour with tapioca since I always keep tapioca flour on hand).

Fruity Gelatin Salad

I'd rate it 0 if I could. I figured you can't go wrong with jello. It was pure sugar. Take a look at the recipe again - it calls for melting marshmellows in soda and adding pineapple juice - no water at all. The cranberry salads are excellent. I'm sticking with those!

Blue Cheese Burgers

My husband loves blue cheese as much as I dislike it. I wan't looking forward to this (for me) but surprisingly I really enjoyed it, too. Our guests asked for the recipe before they were done with dinner.

Quinoa and Black Beans

Impressively healthy - a agreat first experience with quinoa. I've passed this recipe on to several people. The original recipe serves 10 but we wrapped them in tortillas as a main meal and it most comfortably serves four or five.

Chicken Tikka Masala

My 4 and 6 year olds both asked what smelled so good when I was cooking it. As is, it's ridiculously salty. I can tell it has tremendous potential, though. Cutting out most of the salt and subbing gram masala for the cumin and cinnamon should do the trick.

OUTSTANDING!!! I followed others' suggestions and tripled the sauce, etc. Can't imagine it with less. Tastes like it's from a restaurant - an absloute must make.

Pumpkin Muffins II

I halved the spices and used canned pumpkin. Plenty of flavor and aroma. Enjoyed by all - most by our five year old. The recipe makes about 2 dozen muffins, not one as indicated.

Cowboy Skillet Casserole

This is a tasty and forgiving dish. I didn't have enough taco sauce so I used the rest of my salsa and chili sauce. It still tasted very good. Great winter meal!
