About this Cook
Natural non-cook. Boiled noodles and added cottage cheese for years. Got married. Learned to cook. 4 year old son diagnosed with Celiac. Learned to bake (and cook) gluten-free.

Simple but decadent desserts are a favorite, but not too often. I love trying new recipes.
My favorite family cooking traditions
There's no category for this so I'm throwing it in. I love my nicer dicer. It chops everything and simplifies/expedites the entire prep process. I even use it to make apple "french fries" for the kids. The kids love using it with me.
My cooking triumphs
Gluten free bread that rises. Gluten free pizza crust that the entire family prefers over regular crust.

Pumpkin Muffins II
I halved the spices and used canned pumpkin. Plenty of flavor and aroma. Enjoyed by all - most by our five year old. The recipe makes about 2 dozen muffins, not one as indicated.

Golly Gee Gluten-Free Pancakes
One of the better options. Based on my kitchen inventory, I used 1/4c+1t cornstarch in place of arrowroot and sorghum instead of amaranth. They are a little flat and best if eaten immediately. My 6 y.o. gave them two thumbs up.

Gluten-Free White Bread for Bread Machines
Surprisingly moist. After reading other reviews, I added a cup of flour to the mix. When I checked on the kneading process it looked quite dry so I added more buttermilk. It still tasted very good and met with my 6 y.o.'s approval. Next time I'll do recipe as written (again replacing soy flour with tapioca since I always keep tapioca flour on hand).
