Ten Minute Enchilada Sauce

LOVED THIS! Huge hit with my family. I did make a couple of changes. I took other reviewers advice and doubled the recipe since we made about 12-14 enchiladas. We don't like our food to be too spicy so I put in less than a 1/4 cup of chili powder even though I doubled the recipe.I also put in a whole can of beef broth instead of water. I also used one whole can of tomato sauce plus a whole can of rotel cilantro tomatoes. I let the whole thing simmer for about 20 to 30 min. ABSOLUTELY DELICIOUS! I can't comment on if it is authentic or not but we loved this recipe. We will make this again.

Lime Creams

Loved these cookies for my Christmas Cookie Tray! They are different and I love that these are a little bit tart so they balance out the other sweet cookies on my tray. I have not had any trouble with these keeping since I always freeze whatever cookies I'm not going to eat right away. I would recommend doubling the recipe as I get about 16 cookies if I do not double and these are always a hit with my family!

Pistachio Cream Cheese Fingers

These cookies sounded really good but my family and I just didn't want to eat these. Don't get me wrong these are edible we just didn't want to eat them. I don't know. Will not make these again.

Apple Pan Chicken

Pumpkin Chocolate Chip Cookies I

I did one batch of these but I only put chocolate chips in about half of my batch. The cookies without the chocolate chips were okay...I could taste the pumpkin and spices and they were the texture of a cake almost. The ones with chocolate chips just tasted like chocolate totally overrode the pumpkin flavor. Overall they had a lukewarm reception with my family and I will probably not be making them again.

Lemon Cupcakes

We really liked these cupcakes. I used all purpose flour with some baking powder because I didn't have any self rising flower. My cupcakes turned out slightly dense but since I didn't follow the recipe exactly I can't complain about that.I also added a lot more lemon zest than specified in the recipe. However I feel like I could use this recipe as a lemon poppy seed muffin without problems. The batter was absolutely delicious! Also the frosting was light and delicious I will certainly make these again!

Dark Chocolate Bacon Cupcakes

Made these for my family(following the recipe exactly as written)but the overall decision was that the bacon added a strange texture and not a lot of flavor. Plus I thought that the bacon would still be crispy and unfortunately the bacon was very soft even though I almost burned the bacon. I'm glad that I tried this recipe but I will not be making these again. On a side note: the chocolate cake recipe is delicious without the bacon!

Pineapple Casserole Dessert

I really liked this recipe. I did make a few changes to it. The first was that I used pineapple tidbits instead of crushed because I was out of crushed pineapple. I also added some cinnamon to the whipped butter sugar mixture. I thought that the cinnamon really added to the recipe. Also if you are like me you may be questioning the cheddar cheese. I tried it with the cheese and it was delicious. It cuts some of the sweet and gives it a great flavor. Trust me you are not going to be tasting a strong cheese flavor. YUM!

Zebra Cookies

Delicious!! And very easy to make! These are very festive and look great on a holiday tray. The only thing that I changed is I left the powdered sugar off because I wanted my cookies to look like the picture. :)
