Green Rice I

I added a tsp fresh minced garlic because I just couldn't imagine leaving it out :) and I sprinkled some of the cheese over the top thinking it would make a crust but it didn't really, and it really didn't need it. Other than that I just followed the recipe. Delicious! Even the kids loved it.

Broccoli Soup

Nothing extraordinary, but a delicious broccoli soup. I used fresh home-grown broccoli, which took a little extra effort, but made for a fresher tasting soup with vibrant color. I will definitely make it again this winter with frozen broccoli.

Buttermilk Pancakes II

I'm being generous giving this 4 out of 5 with the consideration it MAY have turned out better had I had real buttermilk (I mixed milk w lemon juice) and I may have slightly overmixed. I thought they were too eggy, and second the thought that the batter would make better waffles, or even crepes-- I missed the 1/2 C. milk and I still thought the batter was rather runny. The kids loved them, but they weren't that fluffy nor very filling. Even my 1 year old ate 3! We definitely used the whole batter just for 5 people, 4 being children ages 8 & under. That said: at least my kids loved them.

Cake Mixes from Scratch and Variations

I used the oil substitution recommendation, and while the texture was fine, the flavor was pretty blah. Frosting hides it well enough, but it just lacked any kind of flavor. Even using my best Mexican vanilla.

Addictive Sweet Potato Burritos

This was OK as is. I didn't have any green onions, and my husband's vegan, so no sour cream. Maybe with that or adding some cilantro or something would have punched it up a bit, but we both agreed that the beans were good, the sweet potatoes were fine, but all together it just wasn't worth a repeat at our table.

Sweet Potatoes

This did not turn out at all. I think either I sliced the sweet potatoes too thin, or 450 degrees is just WAY too hot. They were mushy after 25 minutes, but never got crisp... except the ones that were burnt, I guess.

Double Chocolate Brownie Cake

This cake was FABULOUS just as it is written. I was surprised at how fluffy it got after mixing. It really made for a moist and fluffy cake. I loved the gooey chocolate chips... it was delicious served warm-- only because we couldn't wait to eat it! We just melted 2 Tbsp. bittersweet chocolate with 1 Tbsp. butter and drizzled that over the top. Chocolate perfection!
