Transformed Spinach Mushroom Quiche

This gets 5 stars from me because I changed it based on the ingredients I had on hand, and it still was great! Here's the changes: 1 deep dish pie crust; 1 can spinach, drained and squeezed dry; 1 tsp. onion powder; 1 tsp. garlic powder; 1/2 tsp. seasoned salt; 1 1/2 c. shredded Mexican blend cheese; 1/2 c. Parmesan cheese...didn't layer anything; beat the eggs and mixed it all together...baked at 350 degrees for 1 hour and cooled for 1/2 hour. It turned out tasty and wonderful!

World's Best Key Lime Pie

Have made this several times;always turns out great.The last time I made it,my granddaughter said it would be good as a frozen pie,tried it that way;letting it get firm in the fridge first & slicing it before putting in the freezer,then putting it in the fridge a couple of hours before serving to let it thaw,just a little.It was great!

Broccoli Rice Casserole

A GREAT recipe for pot lucks!I add cooked chicken;use chicken broth to prepare the rice;put everything in the crock of my crock pot and bake in the oven until browned on top.Then put the crock back in the base and set on "low" to keep everything warm.I always get lots of compliments and everything is eaten up, even if I double the recipe!

J.P.'s Big Daddy Biscuits

This is such an easy recipe. I skip most of step #3; only kneading the dough then dropping it by tablespoonfuls onto a baking sheet. The biscuits turn out great every time!
