Addictive Sweet Potato Burritos

These lived up to their "addictive" name. I made them for dinner the other night, and after reading some of the reviews I substituted black beans for the kidney beans. Other than that, I left the recipe as it was written. They were DELICIOUS! My 3 kids (2 adventurous eaters and one picky eater) were not big fans, but my husband and I couldn't get enough of these burritos. I served them with salsa, fat-free sour cream, sliced avocado and cilantro all on the side. I also served a black bean and corn salad with it. The next morning I realized why they are called "addictive" sweet potato burritos. I opened the fridge to make breakfast and saw the leftovers. I contemplated, then took one out, heated it in the microwave and had it for breakfast. Even better than the night before. I will definitely make them again. Oh - it also made way more than 12 burritos. I probably could have gotten 15-18 out of the amount of potatoes and beans I had leftover. Not a problem though....next time I'll make as many as I can and freeze them.

Chewy Chocolate Chip Oatmeal Cookies

I have been making this recipe for years now, and it is a favorite. It is the only chocolate chip cookie recipe I use. The only changes I have made are to use half butter and half butter flavored shortening. In my humid climate, it seems to make the cookies hold up a little better. I play with this recipe all of the time - sometimes using half white flour and half wheat, sometimes substituting white chocolate chips and Craisins for the chocolate chips. I have added coconut and macadamia nuts, and even chopped up extra dark chocolate and added it (that was a favorite!). Truly - there is no way to go wrong with this recipe!!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These fish tacos were amazing. I made them and withing a week my family (and extended family) were asking for them again! They are time consuming, so save it for a weekend meal, but the result is well worth it. The only change I made was to cut the chipotle mayo with some non-fat plain greek yogurt, as the original chipotle mayo was too spicy for me (although other family members loved it the way it was, so I guess it is just a matter of taste). Other than that - it was perfect!

Tarragon Chicken Salad

This is the basis for a good chicken salad, but it needs so much more. I eliminated the celery and instead added chopped fresh dill, diced green onions, halved red grapes, chopped walnuts and salt and pepper. Absolutely delicous!

Banana Muffins with a Crunch

These are quite possibly the best muffins I have ever tried. I halved the recipe and it still made 12 muffins, and 7 mini-muffins! I only baked them for about 20 minutes, so watch the time. I also replaced half of the white flour with wheat flour...my kids (and my husband couldn't tell the difference). I used a granola that had dried cranberries and currants in it, which only added to the flavor. I didn't have enough walnuts, so we used half walnuts and half pecans. Overall, they were delicious and I will definitely make them again!!

Creamy Hot Chocolate

Absolutely YUMMY!!! I made this the other night, and my entire family loved it! I used the Hershey's Special Dark cocoa powder, and the hot chocolate came out so dark and creamy. I did listen to other reviewers and used half milk and half water. The kids enjoyed their cocoa with mini-marshmallows on top, and my husband and I enjoyed ours with a splash of vanilla vodka in ours! An easy recipe that makes delicious hot cocoa! I'll never go back to mixes again!

Caesar Mahimahi

I followed this recipe to the t, and did not care for the results. The fish was not very flavorful, and the caesar flavor it did have was not a good compliment to the mahi. I would not make this again.

Lemon Butter Chicken

This recipe was wonderful! I made it for company, and no one could get enough! I used 6 boneless chicken breasts, and pounded them flat so the cooking time would be shorter. I did marinate the chicken in some of the Italian dressing and lemon juice for a few hours before baking. I baked them in 2 pans, and so doubled the sauce recipe and divided it between the 2 pans. The chicken was moist and flavorful! I served it with brown rice, green beans, and french rolls. Everyone's favorite part was pouring the extra sauce from the cooked chicken over the rice. I will definitely make this again for my family...quick, easy, pretty healthy, and delicious!!

Hershey's ® Chocolate Mousse

I had never made chocolate mousse before, but wanted to make it for a special valentine dessert for my husband. This recipe seemed simple and had great reviews. Everything everyone says about it is true....it is easy, and delicious! I made it a day ahead and stored it in a ziplock bag as others had suggested. I made heart shaped chocolate cups (by painting the inside of Reynold's heart-shaped foil cups with melted chocolate and then chiling them and removing foil) and then piped the chocolate mousse into the cups. I garnished with fresh raspberries, a dollop of whipped cream, and chocolate sauce swirled on the plate. It was delicious and beautiful!!!

Baked Salmon with Coconut Crust

This recipe has potential, but needs a little work. I would marinate the salmon in the lime juice for a while before coating it in the panko and coconut. I found that when I cooked it at the reccommended temp, the coconut burned before the fish was cooked. By covering the fish during cooking, then uncovering and broiling at the end to brown and crisp coating, I think that problem could be solved. I served it with caribbean rice (from Zattarain's) and a salad. The rice and salmon go well together!!!
