Addictive Sweet Potato Burritos
These lived up to their "addictive" name. I made them for dinner the other night, and after reading some of the reviews I substituted black beans for the kidney beans. Other than that, I left the recipe as it was written. They were DELICIOUS! My 3 kids (2 adventurous eaters and one picky eater) were not big fans, but my husband and I couldn't get enough of these burritos. I served them with salsa, fat-free sour cream, sliced avocado and cilantro all on the side. I also served a black bean and corn salad with it. The next morning I realized why they are called "addictive" sweet potato burritos. I opened the fridge to make breakfast and saw the leftovers. I contemplated, then took one out, heated it in the microwave and had it for breakfast. Even better than the night before. I will definitely make them again. Oh - it also made way more than 12 burritos. I probably could have gotten 15-18 out of the amount of potatoes and beans I had leftover. Not a problem though....next time I'll make as many as I can and freeze them.

Chewy Chocolate Chip Oatmeal Cookies
I have been making this recipe for years now, and it is a favorite. It is the only chocolate chip cookie recipe I use. The only changes I have made are to use half butter and half butter flavored shortening. In my humid climate, it seems to make the cookies hold up a little better. I play with this recipe all of the time - sometimes using half white flour and half wheat, sometimes substituting white chocolate chips and Craisins for the chocolate chips. I have added coconut and macadamia nuts, and even chopped up extra dark chocolate and added it (that was a favorite!). Truly - there is no way to go wrong with this recipe!!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
These fish tacos were amazing. I made them and withing a week my family (and extended family) were asking for them again! They are time consuming, so save it for a weekend meal, but the result is well worth it. The only change I made was to cut the chipotle mayo with some non-fat plain greek yogurt, as the original chipotle mayo was too spicy for me (although other family members loved it the way it was, so I guess it is just a matter of taste). Other than that - it was perfect!
