Carrot Casserole
This was a big hit at Thanksgiving and book club dinner, and chuch potluck. I cut the sugar to 1/4 cup and it was plenty sweet. Also I did not puree. I used a hand held blender and it had small chunks.
This is so easy to make but it takes a while for the carrots to get tender.
