Italian Spaghetti Sauce with Meatballs

This is my go-to spaghetti recipe. AHMAZING! So easy to customize to whatever tomatoe cans you have. I used 1 can of tomatoe puree, 1 can crushed tomatoes with basil and oregano, and 1 can of diced tomatoe with italian herbs. Let it simmer for 90 minutes then add some fresh basil and more garlic before putting in the meatballs. So delish and couldn't be simpler!

Quinoa Chili

Wow! This was amazing! Of course I did some tweeking. Like others instead of water I used vegetable stock to cook the quinoa. Also took other reviews advice about the "spice" factor. I used 2 jalepenos, 1.5 T of cumin. 1 T of ancho chile powder and about 1T chipotle chile powder and a couple sprinkles in the with meat. When I added everything together I also thought it was a bit thick. No problem. So I added a splash of veg stock, a can of tomatoes chili style, along with a small can of diced tomatoes that I had on hand. I added the extra tomatoes basically because we don't eat beans and I forgot the corn. Topped everything with melted cheddar cheese and cilantro and YUM! I loved the zucchini bites the most! This was delicious and a great way to incorporate all the health benefits of quinoa :) Thanks so much the recipe!

Cranberry and Cilantro Quinoa Salad

Be careful not to put too much onion in this. A small onion is 1/4 cup roughly. I think I put way too much! I ended up having to put another 1/2 cup carrots, cranberries, juice of 2 lemons and some more cilantro to counteract it. I hope it works! We will see tomorrow after it chills.

Angel Hair with Feta and Sun-Dried Tomatoes

Wow! Ahmazing! I'm so happy I tried this! Did everything according to recipe except I added 1 juiced lemon and 2T of capers while sauteing garlic, sun dried tomatoes, and cilantro. I did have a problem with everything sticking. Maybe it's because I cooked the noodles before I started preparing the mixture?? Next time I think I will add the lemon while I'm mixing everything together and I will add more sun dried tomatoes. Overall this is an amazing dish! Very healthy!

Stuffed Peppers My Way

Ummm.. Amazing! Fresh ingredients and so good! Like other reviews we used 1 green, yellow, and red pepper. Sauteed 3 cloves of fresh garlic with the onion, half a pint of fresh mushrooms and a few leaves of fresh basil. Topped with an italian cheese blend because I had it on hand. This might be a meatless dish but you won't miss a thing!!!!!! Try it :D

Everything in the Fridge Pasta Sauce

Excellent! My new go-to pasta sauce. No more jar garbage!!!!!!! I added about a 1T of fresh basil, some italian seasoning, salt and a T of capers. YUM! Love it... super fresh and easy. Thanks Terri!

Spicy Bean Salsa

This is great! I chopped a red pepper and part of a green one. Instead of italian dressing I used 1 squeezed lemon and one squeezed lime. I was also lucky enough to find a can of chili spiced tomatoes. Which I wasn't sure of at first but def worked better because I didn't use any dressing. Also couldn't forget a nice bunch of chopped cilantro and fresh minced garlic. Superb!

Buckeyes I

I have attempted to make buckeyes like 4 times. This time they turned out awesome! Firstly, I upped the peanut butter to 2 cups. Kept butter the same and only used 4 cups of sugar. Perfect sweetness! HOWEVER, be sure and get it super cold before you roll the balls or else you will have a terribly hard time forming balls. The warmth of your hands will melt and you will want to pull your hair out! Ha. After rolling uniform balls they MUST put in the freezer for about an hour to set and get nice and hard. I put the toothpicks in before I set them in the freezer. Meanwhile get the chocolate melting in a double boiler. I used 1.5 bags of 12 ounce chips with a 1/2 4oz bar of shaved parafin wax. Melt well. Paraffin wax is GREAT! Take 5 balls out of the freezer at a time to dip in the melted mixture. You will get the hang of it after awhile. There is def an art to dipping! I hope this helps avoid the nightmares I have faced trying to make these things! And remember, patience is the key :)

Jalapeno Popper Grilled Cheese Sandwich

Umm.. Wow :D A true home run here. A couple of suggestions would be to use a combination of fresh jalapenos and jarred ones. I found the jar kind didn't have enough spice so I had to add some cayenne pepper. Also, don't skimp on the bread! I have made this twice now. Once with ciabatta bread and then with whole wheat. While it still tasted delish on the whole wheat I think artisan bread is the best way to go on this. Both time I made it with colby and I don't think you can go wrong! Absolutely superb!

Yumm! I combined all the ingredients in my mortar and pestle and crushed away! I must say it does indeed need salt which is why I only gave it 4 stars. Other than that don't be scared to put oregano in it as it gives a unique flavor :)

Chungles Pasta

Fantastic! We used black olives instead of kalamata because they were way cheaper. And pretty much had enough ingredients to double the recipe. I used a chopper to nicely chop the olives. After combining all the ingredients in the pan I let it simmer for a good 15 or so minutes continually stirring. This allowed for everything to melt together. The big pieces of mushrooms and tomatoes came together nicely in the end with a beautiful uniform thick sauce! Topped with smoked gouda because I couldn't find smoked mozz. This is a great recipe to try! Beautiful and different! I think the smoked cheese is a must :)

Yummy Sweet Potato Casserole

I have been making this for awhile now and it's perfect!!!!!!!!!!!!! EVERYONE asks for it :] I put about a teaspoon of cinnamon in the potato part and the topping. After I prepare it I sprinkle a bit of cinnamon on top before baking. And this time I used half/half instead of milk because it's what I had on hand... And it was creamier than ever! Def give this recipe a try!!!!! :]

Garlic Mashed Potatoes Secret Recipe

I have been making this for 2 thanksgivings and throughout the year now. I LOVE it! I cut it down to 10 servings and it's absolutely perfect! As for the garlic I cut that down to about 5 cloves minced in my chopper to a fine mince. I add a splash of milk for creaminess. These are the most absolutey amazing potatoes ever! Creamy.. buttery.. and cheesy :] How could anyone NOT like that?!

Sturdy Whipped Cream Frosting

I love love love this! I have made it about 3 times. 2 times were unsuccessful... :( But today was awesome! I followed the suggestions of other reviews. I chilled my mixing bowl and beaters. I used 2 packets of whip it stabilizer, whipped the cream separately and set aside while I combined the other ingredients. Then mixed the everything together. I think next time I will use cherry extract for cordial cupcakes.. mmmm :)
