Morgan's Waldorf Salad

Amazing! Didn't add nuts.. don't like them. I just added raisins to the mix. So divine! We call it "happy apple salad." Thanks for the recipe!

Joy's Prizewinning Trifle

INCREDIBLE! I cannot begin to explain how wonderful this trifle is! Everyone raved, everyone, which is quite rare! I made it for Easter and now it's going to be a requested dessert. Besides all the chopping, it was a cinch to make. I did what other reviewers recommended by soaking the bananas in pineapple juice. I accidentally forgot to layer in the strawberries. When I was all through layering I noticed a bunch of sliced strawberry and was like, ught oh! lol.. No worries. I just made a pretty flower on top with the sliced strawberry's so everyone got some in every scoop. If you are "on the fence" about preparing this trifle I say just do it! You WILL NOT be disappointed :)

Pumpkin Pineapple Chili

This was fantastic! I love the unique medley of ingredients. I have been fighting a cold and with the colorful rainbow of veggies I should be better in no time! I have never used pumpkin puree in chili but I think it gives a beautiful velvety touch along with the coconut milk. I did add a red pepper and pretty much doubled the recipe. I will DEF make this again and tweek a bit. Maybe a hint of lime would be great. Thanks so much!

Apple Crisp II

OH MY GOODNESS! This was so freaking delicious! I kept pretty true to the original recipe except cutting the water down to 1/4 cup and added a little nutmeg. I used tart granny smith which gave it a nice balance. What a fantastic fall recipe to get you in the mood!!!! Thank you so much for a stellar dessert :) Will be making MANY more times

AHHHmazing!! Sweet and spicy :) I did tone down the pepper flakes to 1/4 teaspoon. Also next time I will omit the parsely..... This is truly a sexy dish!

Skillet Zucchini

While I felt my hips get bigger with every ooey, gooey bit I do believe this is the quintessential comfort food. Move over mac and cheese here comes some zucchini! Only change I made was used a T of butter instead of 1/4 cup and threw in a little bacon grease with the butter. Shhhhh... Don't tell anyone :) Fantastic dish.

Warm Shrimp Salad

AHHHMAZING! I'm not really a salad kind of person but this was worth every ounce of effort. I added a T of capers to the shrimp mixture and used the liquid from the shrimp as dressing along with a homemade lemon vinaigrette. Made enough for 4 people. Loved it!

Artichoke Spinach Lasagna

So awesome! I did do some modifications this time but I have also prepared as written. This time I added some mushrooms to the onion and garlic sautee along with the rosemary at that time. I then added two 6oz jars of marinated artichokes along with the oil/liquid mixture that they came in. I let all that simmer for awhile before adding an entire bag of baby spinach and veggie stock. I decided to try jarred alfredo sauce this time around. I bought roasted poblano alfredo sauce. I didn't realize that it had a spicy kick to it but that worked great actually. I then added 2 T of capers, some fresh pepper, and about 2t of dried basil. I allowed all that to simmer for about 10 minutes before I prepared everything with no boil lasagna noodles. I think adding the alfredo sauce make this 5 star recipe a 10 start in the end! I will def be making again and again! Thanks so much! :)

Thai Pesto

This was excellent!!! I did make a few alterations. I doubled the batch and used most of it on 1 box of whole grain spaghetti. I also added the zest and juice of 1 lime. Omitted the fish sauce. Used a T of seasame oil. A few dashes of sea salt. And a T of tubed lemongrass because I couldn't find any fresh. And I served it with ribbons of carrot and crushed cashews. Let me tell ya, this was deeeelish! It is a bit garlicky so next time I might cut that down a little. Will def make again! Thanks for such an awesome meal :)

Absolutely wonderful! I kinda doubled it.. Here's what I did.. 3/4 C EVOO, 5 Cloves of garlic, 1 28oz can of chopped tomatoes, 3t of anchovy paste, 3 T of tomatoe paste, small jar of capers, 2 cans of black olives chopped in mini chopper, and 3/4 t red pepper flakes. Ahmazing! Def think the anchovy paste is needed... but be sure to NOT get any on your hands!!!!! It smells. Lol.. but is needed to give a more complex flavor. We love this dish :)

Italian Spaghetti Sauce with Meatballs

This is my go-to spaghetti recipe. AHMAZING! So easy to customize to whatever tomatoe cans you have. I used 1 can of tomatoe puree, 1 can crushed tomatoes with basil and oregano, and 1 can of diced tomatoe with italian herbs. Let it simmer for 90 minutes then add some fresh basil and more garlic before putting in the meatballs. So delish and couldn't be simpler!

Quinoa Chili

Wow! This was amazing! Of course I did some tweeking. Like others instead of water I used vegetable stock to cook the quinoa. Also took other reviews advice about the "spice" factor. I used 2 jalepenos, 1.5 T of cumin. 1 T of ancho chile powder and about 1T chipotle chile powder and a couple sprinkles in the with meat. When I added everything together I also thought it was a bit thick. No problem. So I added a splash of veg stock, a can of tomatoes chili style, along with a small can of diced tomatoes that I had on hand. I added the extra tomatoes basically because we don't eat beans and I forgot the corn. Topped everything with melted cheddar cheese and cilantro and YUM! I loved the zucchini bites the most! This was delicious and a great way to incorporate all the health benefits of quinoa :) Thanks so much the recipe!

Cranberry and Cilantro Quinoa Salad

Be careful not to put too much onion in this. A small onion is 1/4 cup roughly. I think I put way too much! I ended up having to put another 1/2 cup carrots, cranberries, juice of 2 lemons and some more cilantro to counteract it. I hope it works! We will see tomorrow after it chills.

Angel Hair with Feta and Sun-Dried Tomatoes

Wow! Ahmazing! I'm so happy I tried this! Did everything according to recipe except I added 1 juiced lemon and 2T of capers while sauteing garlic, sun dried tomatoes, and cilantro. I did have a problem with everything sticking. Maybe it's because I cooked the noodles before I started preparing the mixture?? Next time I think I will add the lemon while I'm mixing everything together and I will add more sun dried tomatoes. Overall this is an amazing dish! Very healthy!

Stuffed Peppers My Way

Ummm.. Amazing! Fresh ingredients and so good! Like other reviews we used 1 green, yellow, and red pepper. Sauteed 3 cloves of fresh garlic with the onion, half a pint of fresh mushrooms and a few leaves of fresh basil. Topped with an italian cheese blend because I had it on hand. This might be a meatless dish but you won't miss a thing!!!!!! Try it :D

Everything in the Fridge Pasta Sauce

Excellent! My new go-to pasta sauce. No more jar garbage!!!!!!! I added about a 1T of fresh basil, some italian seasoning, salt and a T of capers. YUM! Love it... super fresh and easy. Thanks Terri!

Spicy Bean Salsa

This is great! I chopped a red pepper and part of a green one. Instead of italian dressing I used 1 squeezed lemon and one squeezed lime. I was also lucky enough to find a can of chili spiced tomatoes. Which I wasn't sure of at first but def worked better because I didn't use any dressing. Also couldn't forget a nice bunch of chopped cilantro and fresh minced garlic. Superb!
