Yup, this is fabulous. I just bought pita chips; I couldn't figure out how to toast the tortillas properly.

Beet Bundt Cake

Pretty good! I made cupcakes and baked them for 25 minutes. I couldn't taste the beets but my sister could. (Although, I told her about them beforehand.) My kids both ate them and loved them. I frosted with cream cheese icing. I also added the 2TBL of cocoa, don't know if it helped but figured it wouldn't hurt!

Fluffy Peanut Butter Frosting

This is delicious and so easy to make with things you already have on hand. I followed the recipe exactly as written, except that I only had reduced fat peanut butter. (What a diet, right?) I just used my Kitchen Aid mixer and added the sugar alternately with the tablespoons of the milk. It was really fluffy and very easy to spread.

Real Italian Calzones

This is a very good recipe, although I did make modifications, as did many others. First, I made four calzones instead of two. I also upped the ricotta by a LOT, using 1/2 cup PER CALZONE, for a total of 2 cups in the whole recipes. I made a couple vegetarian and a couple with pepperoni, and served sauce on the side. I will make this again and again, I am sure.

Rich and Creamy Tomato Basil Soup

This was only okay - I should have used heavy cream instead of light, and I used canned tomatoes so I can't say for sure if it would have turned out okay if I did it right.

Roasted Garlic Cauliflower

Delicious - my husband loved it and he can be picky. I used forzen cauliflower that I cooked in the microwave for about 5 minutes before roasting. I also used a lot more garlic, because we love garlic.

Vegetarian Moussaka

This was okay. I liked it enough to make it again, but I would make it in an 8x8 pan instead of 9x13--it really didn't have enough veggies to make a big tray. Also, I used a whole can of lentils by accident and it was good.

Fresh Raspberry Pie

I liked this a lot, but I would recommend folding the syrup into the berries. Mine kinda just sat on top. Still good, but could have been better. I also used only 1/2 C of sugar and it was plenty sweet. I also used a whole wheat pie crust.

Crustless Spinach Quiche

Very delicious and so easy. I didn't have muenster so I used cheddar and it came out great. In a convection oven, it needs only to cook for about 20 minutes.
