Barbecued Beef

Let me tell you how delicious this is... I made this for my fiancé's work potluck, and it got rave reviews! Putting meat in a slow cooker is nothing new, but what makes this so good is the delicious homemade barbecue sauce! There were some complaints in reviews about the vinegary taste to the sauce, so I just left out the vinegar altogether instead of potentially ruining the whole batch. I added a little extra brown sugar, because I served them as sliders with sweet Hawaiian rolls (TOTALLY recommend you try it. SO good.) Taste the sauce before pouring it over to meat, and just adjust it to your taste, if necessary. I was using a roast straight from the freezer, so I was not able to trim the excess fat before cooking, so to address the fat/grease issue, I put the roast in the crockpot by itself on high for about 2.5 hours. The meat had softened up to a point where I could trim trim the fat and drain whatever grease was in the bottom of the slow cooker. Then I poured the sauce over and cooked on low for about 8 hours. I took another reviewer's suggestion to pour the sauce into a bowl and let it sit in the freezer while shredding the meat. The fat rises to the top and you can just skim it off with a spoon before adding the sauce back to the pot. I did need to make a bit more sauce to add in at the end. It turned out amazing!

Easy Sugar Cookies

So totally buttery and delicious... I can't wait to show these puppies off! I halved the recipe, but added the whole egg. Followed everything else exactly. The result was a crispy outside, soft inside sugar cookie that I will be making again and again! I frosted them with the "Simple and Delicious Buttercream Frosting" from this site, decorated them for the season, and they turned out bakery quality!

Simple and Delicious Buttercream Frosting

Best frosting I have made. Used all butter, since my enormous can of shortening had gone bad, and it turned out divine. So light and fluffy! Used it to frost "Easy Sugar Cookies" that I found on this site, and I am telling you... Bakery quality for sure!

Quick and Easy Chicken Noodle Soup

This is just so good. Seems like it would just be plain and maybe bland, but there is just something about the flavor that is so delicious. And you can tweak it to suit your own personal taste. Personally, I used less broth, more veggies and noodles (which I had leftover from another meal, so they were precooked), and added some garlic and parsley. I'm going to try it with chicken stock next time, I think. But it was still excellent with the broth.

Healing Cabbage Soup

Absolutely loved this. Made minimal changes: used chicken broth instead of water and added some Italian seasoning and a pinch of cayenne pepper. That's it! Everything else stayed the same. I have been sick the last couple days and this soup has been pretty much all I've eaten. And that's ok, because it's delicious!

Slow Cooker Spicy Black-Eyed Peas

This is so good... I only revised it very little. I did soak the black eyed peas overnight with some baking soda, because mine were old and I was worried if I didn't, they wouldn't get tender. I also used chicken broth in lieu of water and bouillon, and threw in a handful each of celery and carrots. You definitely don't need added salt if you use chicken broth. Being a Yankee, I didn't know what to expect, but I totally loved it. :-) Served cornbread muffins along side and bread pudding for dessert. Delish!
