Pumpkin Muffins with Cinnamon Streusel Topping
Made these muffins this morning to take to a crew working at my church - needed to use some pumpkin that I had frozen this fall (a friend gave me a 40# baking pumpkin - and there is a TON of it in the freezer). Recipe worked perfectly. My streusel topping didn't turn out like a streusel - more like a candy top - but it was delicious anyway. I made 18 tiny muffins and 5 regular size muffins. Thanks for the recipe!

Meatball Nirvana
I tried this today and thought it was pretty yummy - I did make a double recipe and instead of 2lb of hamburger, used 1lb hamburger and 1lb of mild sausage as suggested in a previous suggestion. The meatballs were very very good - but way too spicy for my tastes. The house smells so good now!! When I make these again, I will avoid the red pepper flakes and use only the dash of hot sauce. I think I will also add some minced garlic. However, if you are a fan of hot dishes, then this recipe is perfect as written. Excellent recipe. Thanks! Wendi

Spinach Tomato Tortellini
I made this recipe twice this week - once as a practice run and the second time for my bookclub. The type of pasta makes a difference - it was much better the first time when I used the tortillini out of a box. The second time, boxed pasta was not available, so I used the frozen kind. Much tastier the first time. I too doubled the parmesean cheese and used fresh basil - because that is what I had on hand. There are a number of vegetarians in my bookclub so this made a perfect dish for a cold and rainy night. Served with a salad, bread and offered a few Italian Sausages on the side. If I made it again, I would add a few more spices - and definitely only use the boxed pasta (not sure how the fresh packaged pasta would be - maybe even better - but it wasn't available around here). Otherwise, very good. Will make again.
