Reviewed: Feb. 18, 2013
This is such a great sidedish with just about anything! Make it just like the directions...no tweaking was needed for me.

Lemon Chicken Orzo Soup

Reviewed: Jan. 23, 2014
I read the reviews before I made this and I am glad I did. I didn't cook the orzo separately but added it after I sauteed my veggies and added the broth. I ended up adding more herbs to this because it was bland as written. Once I adjusted the herbs it was really good. I think you just have to play with the seasonings.

Roasted Butternut Squash and Garlic Lasagna

Reviewed: Jan. 27, 2013
I made this tonight and it was really good but it is rich. I, like many others, tweaked the recipe some. I sauteed the garlic, onions and mushrooms and then added that to the butternut squash. I also added nutmeg to the sauce like several suggested. I also layered with fresh spinach and it was really good. To cut some calories I used fat free half and half so I just poured it over the top, but next time I will make a little extra butternut squash filling and put that on top with some cheese. I will definately make again!

Grilled Mediterranean Vegetable Sandwich

Reviewed: Mar. 24, 2013
I made this for dinner tonight and I read through the comments and made some changes. I roasted the veggies the night before and I sliced the red peppers and roasted them with the eggplant. I sauteed the sliced portabella with the olive oil and garlic. I don't like mayo so I replaced with "light" garlic and herb cream cheese spread (Atoulle??). Wasn't sure if I would like it hot or cold so I pressed it for about an hour, cut it in 4 pieces, toasted one piece and ate the other cold. It is good either way but I prefer the toasted. This is a very good basic recipe that can easily be changed to your preference and veggie availability. Thanks for the recipe!

Spaghetti Squash I

Reviewed: Feb. 19, 2013
Oh my, it has been a long time since I have had spaghetti squash and I love this recipe. It is light and easy to make. I sauteed onions, garlic, zuchinni, and mushrooms in olive oil and then added some fresh grape tomatoes (quartered) and black olives. Tossed with the squash and topped with sundried tomato feta cheese! It's so easy to adjust to whatever veggies you prefer or what is fresh. This recipe is a keeper.

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

Reviewed: Feb. 17, 2013
I cooked this last night and it was wonderful. The whiskey-peppercorn sauce is a great compliment to the crabmeat stuffed filet. Like others it does take a little longer than 1 1/2 hrs to make. I did find that the sauce had to be cooked above a simmer to thicken enough for the steaks. I served with a basic risotto.

Pub-Style Vegetarian Chili

Reviewed: Dec. 20, 2012
I did change the beans....I used a can each of light kidney, pinto, and black bean instead of all black beans and the combination was really good. I also used petite diced tomatoes and baby bella mushrooms. I'll never eat chili with meat in it again!
