Lemon Chicken Orzo Soup
I read the reviews before I made this and I am glad I did. I didn't cook the orzo separately but added it after I sauteed my veggies and added the broth. I ended up adding more herbs to this because it was bland as written. Once I adjusted the herbs it was really good. I think you just have to play with the seasonings.

Grilled Mediterranean Vegetable Sandwich
I made this for dinner tonight and I read through the comments and made some changes. I roasted the veggies the night before and I sliced the red peppers and roasted them with the eggplant. I sauteed the sliced portabella with the olive oil and garlic. I don't like mayo so I replaced with "light" garlic and herb cream cheese spread (Atoulle??). Wasn't sure if I would like it hot or cold so I pressed it for about an hour, cut it in 4 pieces, toasted one piece and ate the other cold. It is good either way but I prefer the toasted. This is a very good basic recipe that can easily be changed to your preference and veggie availability. Thanks for the recipe!

Spaghetti Squash I
Oh my, it has been a long time since I have had spaghetti squash and I love this recipe. It is light and easy to make. I sauteed onions, garlic, zuchinni, and mushrooms in olive oil and then added some fresh grape tomatoes (quartered) and black olives. Tossed with the squash and topped with sundried tomato feta cheese! It's so easy to adjust to whatever veggies you prefer or what is fresh. This recipe is a keeper.
