This was my first time making pumpkin pancakes and this recipe did not disappoint! They were filling but fluffy with just a slight pumpkin flavor. I followed the recipe to a T except I used vanilla almond milk as I was out of regular milk. I also followed the advice of another reviewer...measure the batter with a 1/4 measuring cup and spread it out in the pan a little so the pancakes stay light and fluffy. I think next time I might add more spices and/or more pumpkin for a stronger pumpkin flavor.
