My Mom's Swiss Steak

Reviewed: May 29, 2005
Good base recipe. I floured and seasoned my steaks first and then pounded them down. Then I browned my steaks in half butter/half oil mixture before returning vegtables and added a can of tomato soup. Really tasty, I will keep this recipe and keep trying variations. (Wish I would have made mashed potatoes with this!)

Mashed Sweet Potatoes

Reviewed: Apr. 17, 2005
Whole family liked it. Used real Michigan maple syrup and whipping cream instead of milk. Didn't have the trouble with the boiling time as another reviewer did. Served with jerk chicken and fresh gold pineapple. Will make again. Thanks!!

Baked Havarti Chicken

Reviewed: Apr. 17, 2005
This dish really surprised me. I LOVED the unique flavor the Greek seasoning gave the chicken - you have to use it to get the full effect of this dish! I "googled" for the recipe since I didn't have it in the pantry. I used: salt, pepper, oregano, onion powder, garlic powder, nutmeg, cinnamon and parsley flakes. Also doubled the sauce. Fantastic and different! Thanks for the recipe!!

Rice Casserole

Reviewed: Apr. 14, 2005
Five stars for speed and taste! I made this up about two hours ahead of time so that I could come home and just pop it in the microwave as part of a dinner I was making for a friend. Of course, the rice soaked up most of the liquid so I cooked it for 10 minutes on 80% and it was done and tasted great! I love when mistakes work out!!

Old Fashioned Coconut Cream Pie

Reviewed: Apr. 7, 2005
Yummy!! Made it with the full amount of flour and wasn't put off by the taste at all - in fact, everyone love it! Why one more review? I wanted to share this with fellow beginners: Heed the cook time! On my gas cooktop, the "pudding" section took well over 30 minutes to thicken and finally boil. In fact, I adjusted the heat to mid-low after about 10 minutes. Also, only had whipped topping from a can left over from Easter and that tasted really good too. Thanks Carol H.!

Chocolate Cake Surprise

Reviewed: Mar. 2, 2005
Just okay for me. I used more coconut than called for but otherwise I followed the recipe to a tee. The cream-cheese flavor is really pronounced and I would have expected the chocolate to be just as rich to balance the flavor. Maybe I'll try a brownie recipe with the cream-cheese topping next time.

Creamy Rice Pudding

Reviewed: Feb. 9, 2005
I replaced the uncooked rice with 3 cups cooked instant rice and equal amounts of whole milk. Also, substituted the sugar with Splenda and used almond extract instead of vanilla - changed both because I was out of sugar and vanilla. I give it a five star because it was sweet, smooth and creamy.

Baked Ziti I

Reviewed: Dec. 20, 2004
Made this for a holiday potluck and it was a big hit. As suggested, I used ricotta cheese in place of sour cream for a creamer flavor and I used spicy sausage instead of beef. Next time I will add some garlic and maybe some more spice to give it more heat. Thanks for the recipe!

Holiday Peppermint Bark

Reviewed: Dec. 17, 2004
So easy! I was worried, because I couldn't find the white chips so I bought a white candy bar that came in its own microwavable tray used for dipping fruit, pretzels, etc. that was 16 oz. then I chopped up some candy canes (only had 8 oz.) and stirred the entire amount into the melted chocolate and spread on wax paper. Turned out really good even though I didn't have the correct amt. of ingredients! I'm going to deliver my cookie trays to the neighbors tonight and the bark really adds color! Next time, I will reserve a few pieces of candy as the recipe instructed to create an even brighter red color on top.

Chow Mein Clusters

Reviewed: Dec. 8, 2004
Super easy and yummy. I took the advise to microwave the chips on the "defrost" function rather than use a double broiler. I have a Whirlpool Gold and I selected Defrost, Fish, and .5 pounds (or pressed 5 on the keypad) and it worked great. I forgot to stir during the heating too. My batch produced about 28 cookies. Thanks for the recipe!

Chicken Piccata II

Reviewed: Nov. 11, 2004
Pretty good! Not too much lemon flavor as some had stated. I added capers and artichoke hearts. Next time I think I'll pound the chicken flat and use a little more of the flour mixture - I think that will improve the flavor a little. Thanks for the recipe!!

Loved the cake portion, but I personally prefer a non-butter topping because it is easier to distribute. i did sprinkle pecans on top as suggested. Husband's coworkers love it! Thanks Jan!

Always a winner. I make this for my husband's friend everytime he comes over to help out with home projects. Apparently I make them better than his wife does - which is hard to believe but it makes me feel good.

Made these exactly to specification and they tasted very cakey to me. Maybe more eggs? Also, maybe substitute butter for the oil to give more flavor? Probably won't make again - sorry.

Burrito Pie

Reviewed: Oct. 21, 2004
Made this dish low carb for my husband by omitting the beans and using low-carb tortillas. I'm giving it five stars not only because my huband loved it, but because it was so easy to make. I also added hot chile sauce to give it a little more kick. Thanks Kathi!

Award Winning Soft Chocolate Chip Cookies

Pretty good recipe. I halved the recipe and added salt as suggested. My husband liked that they weren't too sweet, personally I thought they could have been a little "gooier." I still like the Toll House recipe, but this isn't too bad either - thanks for sharing!
