Salad Dressing Cupcakes

While this was a novel idea and they came out moist, we just couldn't get past the smell. They just didn't smell like a sweet baked good, but rather like salad dressing. I didn't add a frosting, so I'd certainly recommend one. My three-year-old son enjoyed them though - thanks for the idea!

Cuban Midnight Sandwich

Big hit for our Cuban Themed dinner! I had a "make your own" bar for picky eaters and used yogurt instead of Mayo. Also took the advise and used the George Forman grill. Tip - use pam or other spray and hold the top down. I have the big GF grill and it fit three sandwiches, but we held down the top and then flipped and rotated the sandwiches after a few minutes. Served with plantians, beans and rice!

Sangria! Sangria!

WOW - Superb! Served this tonight for a Cuban-themed dinner for six friends and the two batches weren't quite enough, so we hit a bottle of red wine after we ran out of the Sangria! I loved the brandy and triple sec and don't think I'd substitute those. I omitted the sugar and added Diet 7-UP instead of carbonated water. Even the red-wine hater asked for more!! The best new recipe I've gotten in awhile - thanks!!

Amazing Italian Lemon Butter Chicken

Very good!! After a few nights of failed meals, this recipe redeemed me! Way too much butter, I cut back to 2T and substituted chicken broth for the wine and started out by marinating the chicken breast with lemon juice and herbs. Will make again - THANK YOU!!

Tomato Pie II

Super easy and great way to use up tomatoes. Didn't have any problems with the crust not cooking, however, my oven runs hot. I used light Miracle Whip and a blend of Mexican cheese and I thought it was rich in taste. Pop in the oven, serve with a salad and you're done! Thanks!

Shrimp Chowder

Very creamy! Took the advice and added the potatoes with the onion and celery. Next time I'll saute on low, I burnt the bottom of the pot. I also microwaved the room temperature cream cheese for a minute on half power and it blended very easily! And I added cinnamon at the end - yummy!!

Mahi Mahi with Onions and Mushrooms

Really not the best, but quick and easy to make in a pinch - I thought I had purchased a bag of Costco frozen salmon and took it out to thaw this afternoon and THEN saw that what I had was Mahi Mahi. I added some butter at the end as one reviewer suggested and decided this was needed even though I'd prefer to save my calories. Next time, I think I'm going to add Taco seasoning instead of salt/pepper and lime juice instead of lemon and make the rest of my mahi mahi into fish tacos! Thanks for helping me out tonight! Kim

Artichoke and Sun-Dried Tomato Chicken

Good, but needed a little more kick for us. We also added garlic and Costco's marinated artichokes and pesto spread! I'll make this again and add some crushed red peppers. If you're looking to put over pasta, make sure to add more liquid because the recipe's called for measurements weren't enough for "sauce." Thanks!

Snickerdoodles I

I too used real butter, but no one mentioned how sticky these are. I had to put my batter in the fridge for 5 minutes and then immediately "put" on the baking sheet - when I attempted to roll the first one, my fingers had more dough on them than the cookie did! So I just sprinkled the sugar mixture on top. Tasted great, but looked like little scones. I'll try again soon!

I'd give more stars to this recipe if I could! This was SO easy and really flavorful - should be in every mom's "Not sure what to make tonight" file!! I served this with bag salad and 90 second microwave Uncle Bens and had dinner on the table in no time.

Very sinful! I used sugar-free pudding and light cream cheese and it was still rich! Next time I'll mix the pudding more thoroughly, it was a little too lumpy.

Raspberry Squares II

Five stars for taste and VERY easy to make! Used Splenda and it turned out wonderfully. I sprayed the dish with Pam first, but with all the butter, most likely it would have come out just as easily. Next time I'll use more jam and reserve only a cup of the mix for the topping. Thank you for this keeper!!
