African Sweet Potato and Peanut Soup

EXCELLENT! I used 2 pounds of sweet potato, subbed vegetable broth for the water, simmered uncovered, used 6 TBSP peanut butter (put it right in there in the food processor while I pureed the soup) and used a half TSP of cayenne - we like it spicy! I'll make this again and again.

Quinoa and Black Beans

I wish I had a positive review of this recipe. I love quinoa and I love black beans, but I just didn't like 'em together. The flavor & texture of quinoa doesn't complement that of black beans, and adding the cayenne and cumin only made this dish worse.

Grandma's Slow Cooker Vegetarian Chili

Almost perfect! I added 6 dried chilis, 3 tablespoons of maple syrup, 2 teaspoons of cumin, and a little salt to my taste as my family prefers very spicy chili. I'm a strict vegetarian (vegan), and this recipe is a staple in my home. It's my (omnivore) husband's favorite dish! It's perfect topped with vegan parmesan and served with hot vegan corn bread. I'll continue to make this again and again.

Vegan Brownies

EXCELLENT! I've made these brownies twice before, and there's a batch in my oven again tonight - they're delicious! I've also made a low-fat version substituting 1 cup of pureed prunes for the oil, and it turned-out great. A definite keeper.

Easy and Delicious Chicken

Far from phenomenal, but tasty nonetheless. This dish is VERY salty, but I think this can be remedied by making one's own italian dressing and omitting the salt, and/or by using low-salt chicken broth. It's also very rich (even with lite cream cheese and half-fat cream of chicken soup), so next time I'll use light sour cream instead. I served it over egg noodles, with a side of steamed broccoli.

Garden Pasta Salad

My modifications: I only used 1 cup of italian dressing - 2 bottles is far too much. I used white flour rotini - it was all I had on hand. I omitted the onion (my preference). I added 1/2 cup each frozen corn kernels and frozen peas, 1/2 cup of sliced black olives, and 1 cup of broccoli florets. The olives really improve the taste. Thanks for a great recipe!

Andrea's Pasta Fagioli

I can't really rate this recipe because I changed it some... I used 2 stalks of celery diced instead of onion. I doubled the garlic. I used 1 can of red kidney beans instead of navy beans. Next time I'll add a 3rd can of kidney beans. I added 1 beef boullion cube. I used 3/4 lb. baby-shell pasta instead of ditalini. I also added 3 large cooked and chopped spicy italian sausages. I held the parmesan as a garnish. Thanks so much, Andrea, for the great foundation of a fabulous soup! I'll make this again and again!

Creamy Italian Dressing II

Excellent recipe, and definitely a keeper!! I prefer salad dressing a little thinner than this, so next time I will only use 1/2 cup of mayonnaise. Thanks Christine!

My Chili

I added 2 small (8 oz) cans of brown beans in tomato sauce, 1/4 cup of brown sugar, and I used ground chicken rather than beef. At step 2, I combined all ingredients in a slow-cooker. This was my first time making chili, and it turned out excellent!! Thanks for a great start to great chili! :-)

Apple Oatmeal Cookies I

I've made this recipe over a dozen times, and I just love it! I omit the walnuts, and I substituted margarine for shortening because I rarely have walnuts or shortening in the house. Also, I double the cinnamon because I just LOVE the flavor it adds to these cookies. They're absolutely delicious!!

Delicious!! I've made this recipe 4 times already! I've omitted the pecans (I rarely have them on hand), and used margarine instead of butter. They've turned-out perfect every time! I also by-pass rolling them into balls. I guess I'm just lazy that way. :-)

Simple Pancakes

I took the recipe review advice and omitted the salt and added 1/2 cup flour to the recipe. My advice is to cook on high and be patient. This recipe IS a runny mess if you turn these pancakes too quickly. They turned-out great! I'll definitely be making this recipe again!

Confetti Bean Salad

I have never in my life liked bean salad... until THIS RECIPE! I used 1/2 tsp crushed garlic, and omitted the onions. I substituted the 1/2 cup of green pepper for 2 full cups of red and yellow pepper. I can't rave enough about it. This salad is delicious - I can't wait to share it with my family!!! ;-)

German Apple Pancake

Quick Pasta Sauce

A fabulous start to a sauce of your own! I used a can of diced tomatoes because that's all I had on hand. I doubled the garlic, added 1 TSP oregano, 1 TBSP sugar, 2 TBSP ketchup, and 1/2 TSP crushed chillies. It's a delicious and fresh tasting sauce. Thanks!! :-)
