My favorite things to cook
Strangely, I worked for some years as a specialty cake chef making mostly wedding cakes; however, at home and for myself I like to cook and eat healthy foods! I like to find new twists on healthy and/or vegetarian dishes that introduce new flavor ideas and are cultural as well as beautiful as well as healthy as well as delicious. I like a lot of color, a lot of fiber and nutrients and no processed food products. I dry fry and grind my own spices. I make my own baked products when required but generally stay away from bread products and white flour in my foods. I like going back to traditional cooking techniques and learning about the history and traditional ways of preparing dishes while also trying new flavor combinations. I eat lean meats but also frequently eat and enjoy vegetarian dishes.
My favorite family cooking traditions
I am from the south and believe that this is where I grew to love my vegetables. My country grandmother taught me to grow, cook and appreciate the health value of food and vegetables. She brought me up and I was at her side in the garden and in the kitchen; therefore, my favorite cooking tradition is sharing and teaching everything I learn about food the way she always did with me.

Refreshing Sweet and Spicy Jicama Salad (Vegan)
I made this recipe with a few substitutions: I had no navel oranges so used a can of mandarin oranges. I also had red bell pepper and 1 orange and 1 yellow anaheim and 1 jalapeno. Everything else was the same. It made for a gorgeous salad and was quite delish! Served it with my homemade tortilla soup. It was perfect and even better the next day.
