Asparagus Cashew Rice Pilaf

The Best Lemon Bars

These really are fantastic lemon bars. Classic, simple and really, really good. I have made this exactly as written, and with added zest of the 2 lemons in the filling. Both are excellent- if you add the lemon zest, the flavour is a little more tart and lemony. With or without the lemon zest, just make sure you use real lemon juice. It makes ALL the difference in this recipe- bottled lemon juice just is not the same.

Cedar Planked Salmon

FANTASTIC. This is a classic salmon dish that just can't be beat. Note to those people out there who are marinating salmon overnight- salmon begins to break down after 30 minutes of marinating. The texture will be severely compromised (mushy) if you do this! You might not notice it on frozen fillets but for those of us who live on a coast and feast on fresh salmon, it is a MAJOR no-no to marinate salmon for more than 30 minutes!

Lemon Chicken II

Good recipe with very good sauce. I give it 3 stars because as written, it's just OK. After making it a few times, I now saute the chicken (rather than deep fry) for a healthier dish, and add the sauce to the chicken for a final few minutes of cooking. This coats the chicken more evenly and pulls the dish together.

Sorry- I thought the cake was dry. There are other recipes I find much more moist and have more flavour. The cardamom did not add the "special" element I thought it would.

Herb Rubbed Sirloin Tip Roast

The cooking method in this recipe was absolutely fantastic- I will certainly make roasts this way again as the meat was perfectly cooked and very juicy. The spice rub, however was out of balance. My family loves things spicy but there was WAY too much paprika and cayenne- these spices completely overpowered the other flavours. Next time, I'll adjust the spice more to our liking (cut the paprika down to a teaspoon and the cayenne by at least half, maybe more). That being said- spice mixes do tend to relate to personal preference. The cooking method was excellent and that's why I've given 4 stars. I'll make this again with tweaks to the spice.

Beef Barley Stew

I made this recipe exactly as written, without changes. As written, I thought it was a little rich (not necessarily a bad thing!). Next time, I'd cut the wine in half and add more barley- most of the reviews here seem to recommend 1/2 a cup. All in all, this is a really hearty and full-flavoured winter soup that I'll certainly make again.

Cherry Tomato Salad

Absolutely delicious, exactly as written. This is a perfect way to enjoy fresh summer tomatoes. I tend to use fresh oregano instead of dried but can't imagine this would change the end result very much.

Fluffy French Toast

Very nice french toast- not too sweet and nicely spiced. The toast fries up very light and fluffy and the flour in the batter seems to remove any possibility for sogginess. In the end, perfect french toast with a great texture and flavour. I will certainly make this again.

Homemade Black Bean Veggie Burgers

As written, this recipe is NOT 5 stars (hence my 3 star rating). I made this exactly as written and ended up with a veggie burger that was too wet to hold together in a patty and had an odd spice flavour (too much cumin and not enough salt). That being said, this recipe is a good base to add to- and that's what most people hear are giving their 5 star rating to. With the addition of: grated zucchini and carrot, salt, pepper, more breadcrumbs, and fresh parsley (and the decrease of cumin), these burgers are very, very good. This recipe is actually one that works well with just about any grain or legume added (wild rice, lentils, quinoa, green onions) so my recommendation is to think of the recipe as a base to build your own creation from.

Apple-Berry Pie

This is one of the best pies I have ever made. The filling is not soggy, but a wonderful texture and perfect balance of sweet and tart. The pie was even better the second day, and I will certainly make it again. I usually make recipes exactly as written the first time; because of a dairy allergy, I omitted the butter. The pie was fantastic without it.

Beth's Spicy Oatmeal Raisin Cookies

Excellent classic recipe. I make this with dairy-free margarine (to make it allergy-safe) and I'm sure this cookie is even better with butter. With margarine, it is a beautifully textured cookie with the perfect balance of both crunch and softness and even more perfect flavour, thanks to the spice mix. Thanks so much for the recipe!

Frozen Greek Yogurt

I also love Greek yogurt but did not enjoy this recipe. The flavours did not blend well and the texture of the yogurt, when frozen, was very icy. I served this to guests who also gave less than favourable reviews. Not a repeat recipe for me.

The Best Ever Chicken Nuggets

Sorry- as written, the pepper flavour dominates an otherwise bland dish. If you read the reviews here, most people rating 4 or 5 stars are adding a lot more spices and breadcrumbs. If people would rate this recipe as written, I think the ratings would be MUCH lower.

Strawberry Pie II

This has been my go-to recipe for Strawberry pie for the past 6 years and is one that friends and family look forward to each spring. I made it for the first few years as written, and was disappointed that sometimes, the thickened glaze did not encorporate evenly with the strawberries in the pie. Now, I fold the uncooked strawberries into the glaze and add the whole thing to the pie. It just works better!

It's Chili by George!!

I agree with the last poster... this is a very heavy chili. The second time I made it, I decided to use it as a base as the spicing is just excellent. To lighten it up, I add 2 chopped carrots, 2 chopped celery stalks, 2 cans of mixed beans (with liquid), a can of black beans (drained and rinsed) and a quarter cup of chopped parsley. If I have mushrooms or red peppers, I usually chop those and throw them in as well. The additional beans and vegetables transform this dish and it gets rave reviews. It's a good base recipe- hence the 3 stars.
