Chicken Enchilada Slow Cooker Soup

I have made this so many times and it is one of our favorites! I make exactly as is only I always double or triple the recipe if we have leftovers or for a party. I have made for several fundraiser "soup" suppers and it is ALWAYS one of the first crockpots to be gone! I have omitted corn before only because I didn't have on hand and sometimes throw in more cilantro just because we love it but you don't have to change a thing and it is delicious!!!

Creamy Chicken Lasagna

Made this last night and it was FANTASTIC!!! I basically doubled (tripled the chicken and spag. sauce) the recipe since I cook on Sunday for the whole week and I was able to make 2 9 X 13 pans and a small 8 X 8 pans, we LOVE leftovers. I, too, put my chicken in the crockpot in the early AM and then just shredded in the afternoon before making, seasoned the chicken with garlic and onion powder. I added sautéed chopped white onion and threw in raw mushrooms like a few reviewers suggested and just used Prego for the sauce. Used reduced fat cream cheese and went light on the mozzarella to try to make less fattening. Also used no bake noodles. Hubby RAVED about it and honestly, what a nice change from regular lasagna. I like cream cheese but more in a dish than plain and not huge amounts and I thought the amount was just right, didn't seem overly "cream cheesey" to me at all. Layering is kind of a mess but totally worth it for this dish! This is one we will make often!! I definitely think you can add your fave veggies to this for added nutrition or taste as well.

Angel Chicken Pasta

Have made this twice now and we love it! I try to always make as written but in this case I left out the butter only because we never have it in the house. Everything else I left the same but after reading reviews, did double the sauce recipe and added fresh mushrooms when I went to bake it. My husband said it was like going to Olive Garden! The sauce is kind of rich so you may not need as much as you think but then again he wanted extra so guess it just depends upon your taste. I am trying to cook more and keep trying new things and this was just excellent and EASY!!!!! This recipe would be a great "company for dinner" recipe but also just a quick weeknight dinner as well. I used just the store brand of the Italian seasoning, a less expensive cooking white wine and then Philly brand of the chive/onion cream cheese and it turned out incredible! Thanks for the recipe!

Hash Brown Casserole for the Slow Cooker

I have made this recipe for big parties a number of times and it is always a huge hit!! I usually leave out the onions since kids are eating but it still tastes amazing! I just use Velveeta but usually do about 3 cups just because we like cheese and it come out great. Otherwise, do it as is and typically double and triple the recipe and then just divide into two crockpots, cooking time is pretty accurate although I have cooked it much longer on low and it is fine. Just have to keep stirring so it doesn't burn! I would HIGHLY recommend using the crockpot liners for this dish though, cleanup is a breeze. I have done before without and pots usually have to soak a while! I have passed out the recipe numerous times as well.

Slow Cooker Sweet and Tangy Chicken

Followed exactly as written except decreased 2 bottles of BBQ sauce to about a bottle and a half and it was fine. Did thicken with some cornstarch at the end but you don't have to do that, still tasted great. Only cooked for 6 hours as well and it was done. Used Sweet Baby Ray's Honey BBQ as suggested by others. It is a different taste, much sweeter but it grows on you! My husband LOVED it. If you like a sweeter BBQ taste, give it a try! VERY easy to make!!

Slow Cooker Chicken Cacciatore

Just made this last week and it turned out wonderful. I followed recipe almost exactly but added a few more veggies (yellow peppers/zucchini/red peppers) and it was awesome. Very, very simple to throw together! Cooked on low for almost 10 hours and chicken was really tender. Veggies would have been better had I thrown those in later in the process but they were still good!

Spinach Pasta Salad

Made this for a block party we were going to this summer. LOTS of salads at the party, this one was gone FIRST and in record time! I usually read most of the reviews to see what changes folks have made but try not to stray too much from the recipe. This one is such a great base and can add your own personal likes to it. I eliminated the feta, olives and cloves of garlic, only because of personal taste. Did only use a half a red onion, that was more than plenty. I, too, added fresh basil to the dressing because we LOVE it and it was great but you wouldn't need it to have this still be yummy. I also added some fresh chopped red and yellow peppers. DELISH!!! I also made it again a few weeks later cause the hubby requested and we had it for leftovers for 3 straight nights and it was still great! A really good dish for a party or potluck!

Oven Omelet

Mexican Style Shredded Pork

This was to die for!!!! Followed it exactly to the recipe, only left the pork whole but it shredded EASILY! I did find that the Tabasco brand had a Chipotle sauce so used that and again, taste was fantastic! I did try the rice as well, I liked it although it tasted better the next day but on that, you definitely need to use enough ingredients to your own taste, I used a whole lot more cilantro because we love the stuff. Even threw some in the roast at the end. Love all of the reviews as it helps me to know what works and what doesn't since I am not a real experienced cook! Planning on making this for an upcoming party, yummy!

Tater Tot Taco Casserole

Made this recipe last week and it was delicious!! VERY easy to make as well. Left out corn and beans, don't care for them in it but added a can of Rotel. Used more enchilada sauce and less cheese just to try to make a little less fattening. Husband wanted seconds and thirds! Will definitely be making this more often!

Weeknight Lasagne Toss

Made this last night and it was DELICIOUS! My husband wanted a THIRD helping! I also added the chopped onion and minced garlic to the ground beef and cooked that, then followed the remaining recipe but added even more peppers than recipe called for, worked just fine! Used fat free version of dressing. Used the oven ready lasagne noodles and you really need to keep stirring it often and "unsticking" the noodles from each other but that wasn't a problem for me. If you like Ricotta cheese, DEFINTELY add that step, it makes it truly taste like lasagne! Extremely quick and easy dish, one that most people can make to their tastes. This is a definite keeper in our meal rotation as well!

Tex-Mex Beef and Rice Casserole

Just made this recipe last night and it was great! I couldn't find the Santa Fe blend so I used the Savory Garlic and added chili powder and cumin like others recommended. I also used the packaged spanish rice instead and that worked well. Eliminated the corn due to our tastes and added an extra can of the Rotel, added extra crushed corn chips and baked uncovered, it was wonderful!! VERY easy to make on busy weeknight as well!
