Cobb Sandwich

Very good sandwich with all of the traditional Cobb Salad ingredients. It could use a flavor boost with the addition of onions or black olives. I made my own blue cheese dressing using "Bill's Blue Cheese Dressing" recipe from this site. It was the perfect choice. Since the dressing recipe uses a lot of mayo, I used it as is and did not add the additional mayo called for in this recipe.

Grandma's Italian Grilled Cheese Sandwich

I was a little worried about the eggy, French toast texture of the bread, but it all comes together with great flavor and flare. It's like garlic bread meets grilled cheese meets French toast all in one. My husband loved them and he's not a grilled cheese fan. Can't wait to make again and experiment with other types of cheeses like mozzarella, provolone, or a blend of different cheeses. Thanks, rae for sharing such a wonderful recipe!

Tomato Florentine Soup I

This is quick 'n easy, yet it tastes and feels like it's homemade from scratch. Not wanting to cook my pasta separately, I brought the tomato broth mixture to a boil, added 1/4c dry pasta and cooked until al dente. Then I reduced the heat to low, added about 8 oz of fresh baby spinach, torn, and cooked until wilted. Will definitely be making this one again.

Mushroom Spinach Omelet

This is now one of my favorite "go to" recipes when I need something quick to eat, especially for dinner. I love all of the fresh vegetables! An 8" skillet is way too big. The eggs barely spread across the skillet and it's not very omelet like. I would definitely use a smaller skillet or add more eggs.

Parrothead Salad

This is a fun salad that adds a lot of color to the table. I took a few liberties with this like using fresh grapes instead of raisins and also adding kiwi since I had some that I needed to use. It made for one eye-popping festive salad! That said, I did not care for the red onions, bacon, or tomatoes. The flavors did not blend and made for an overall odd taste. Otherwise, it would have been perfect.

Pineapple Upside-Down Cake in a Glass

Just when I thought it couldn't get any better, it did! I used Three Olives cake flavored vodka and it's so sweet you can drink it straight! If you can't find it, the older version of this recipe calls for "vanilla" flavored vodka. It's also very good.

Salmon With Dijon Butter Sauce, Asparagus and Herb Butter Angel Hair Pasta

This was simply divine. The only thing I was missing was the glass of wine. I was concerned that the pasta was going to be too dry, but it wasn't. The mustard sauce is fantastic. Almost like a mock hollandaise sauce with a mustard flavor. I just wished there was more of it! I would have loved to have drizzled some over the asparagus.

Cream of Asparagus and Mushroom Soup

I followed the recipe exactly and this soup knocks it out of the park with great flavor and elegance. The only change I would make is to add more asparagus and maybe potatoes at the end to give it more texture. (Just a personal preference.)

Holly's Chocolate Chip Cookie Dough Dip

This recipe is good as written, but it does require a slight stretch of the imagination to taste a “cookie dough” flavor. After several attempts at tweaking, I’ve decided that I like it best using the mini semi- sweet chocolate chips and doubling the amount of brown sugar and vanilla. It definitely improves with age and I would recommend making at least one day, if not two days in advance for optimal flavor.

Zimbabwean Chicken and Vegetable Soup

I love trying new recipes that have unique ingredient combinations. I love it even more when it exceeds all expectations. The peanut butter blends very well with the vegetable broth giving it an added depth of flavor that warms the soul. I didn’t have a turnip, so I added a potato. I also tossed in a partially opened can of Rotel tomatoes, but other than that, I stuck to the recipe. This recipe is a keeper!!

Sausage, Peppers, Onions, and Potato Bake

Great combination. I cut the recipe in half and took the easy road. The recipe calls for frying everything separately in a skillet before transferring to a casserole dish and baking. I decided to leave it all in the skillet, covered it with a lid and continued to cook on the stove top until the potatoes were tender. We had a tiny bit left over and to make those stretch, I added it to some fried cabbage creating another great combination.

Heavenly Blueberry Smoothie

Caldo de Res (Mexican Beef Soup)

This is a comforting, down home beef stew. There's no spice or seasoning other than the beef and vegetable flavor. Some would call it bland, but I call it comforting. Not all Mexican dishes are loaded with spice.

Beef on Weck

This takes a French Dip to an entirely new level. I love caraway seeds, so this just hit the spot. The coarse salt adds a texture reminiscent of a giant soft pretzel, although I must admit it was too salty for me using the recommended ratio. The caraway seeds and salt will stick to the bun using plain water, but I found that you get a crustier top if you brush the buns with an egg wash consisting of egg whites and water.

Sally's Spinach Mashed Potatoes

These are EXCELLENT and loaded with flavor! They're everything a stand-alone potato dish should be. I used fresh baby spinach and sautéed it a skillet with a bit of olive oil and kosher salt until wilted. Huge, huge hit!

Walnut Banana Bread Pudding

Expectations are everything and this didn’t turn out the way I expected. I was hoping for a bread pudding that leaned toward the lighter side with a custard like texture, but this turned out dense and heavy. It was so dense that it could be cut into solid pieces like a piece of cake. Talk about banana, banana, banana! The coconut milk was the ingredient that attracted me to this recipe and I couldn’t even taste it. I ended up making a rum sauce and poured it over the top for a contrasting flavor. All in all, it was good, but nothing I would make again.
