Roasted Vegetable Medley

Very good mix of veggies. The roasted peppers are a nice touch. Mine took only about 1/2 the time to cook though and they got slightly blackened, which made them even yummier!

Sweet Potato and Carrot Soup with Cardamom

Fantastic! I made only 2 changes - I used 1/2 the amount of cardamom and used garlic instead of onion. Loved the spicy kick. Delicious!

Yummy Veggie Omelet

This was yummy! This was my first attempt at an omelet and I really appreciated the step by step instructions. For veggies and stuff, I chopped up tomatoes, spinach, mushrooms, jalapenos, and garlic, and I used goat cheese. I added a side of roasted red potatoes. Next time I plan to try olive oil instead of butter for hopefully a lighter taste. Thanks for sharing!

Fresh Pesto Pizza

This was yummy. On the rich side - I may experiment with making my own pesto next time and using less mozzarella (the feta added more flavor and the mozzarella may have added to the heaviness). I used slices of Roma tomatoes this time. The spinach got a little crispy, which was really good.

Butternut Squash Soup II

This was delicious. The first time I made it it was perfect. I left out the celery and onion and used veggie stock. I added garlic and curry powder based on another review. I underestimated how much chopped up butternut squash I had but this was a good thing. I used fewer potatoes and carrots and less veggie stock and the soup was thick and sweet and delicious. The second time I followed the recipe more closely (no celery and onion, though) and it wasn't nearly as sweet and flavorful. I could taste the potatoes more than the butternut squash. I will definitely make it like I did the first time in the future. It was good both times; the first way was just more flavorful.
