Penne with Chicken and Asparagus

This is a great and simple one dish meal I was so thankful to have after a ridiculously busy day. Didn't have chicken broth on hand so I did it the old fashioned way and used a cup of the salted pasta water in addition to the chicken juices that were left in the pan. It was tasty and simple and much more nutritious than ordering a pizza--which I was tempted to do because I thought I was too gosh darn tired to cook for my family of 5. Kids were happy, husband was happy, and I was happy especially seeing the kids eat chicken and asparagus.

Beef Stroganoff III

This was delicious! I served this to a bunch of moms and their preschoolers. It was eaten and enjoyed by all, even a mom who has never like Stroganoff. Thanks so much for this great recipe. I am passing it along.

Roasted Asparagus and Mushrooms

Pasta With White Clam Sauce

Oh my goodness! So yummy and so simple! I was impressed that such simple ingredients could be this good. I definitely recommend this for a quick, hot meal. Even my picky toddlers loved it. I've never made this kind of pasta before so I wasn't sure what "White Clam Sauce" was in the ingredient list. I went to the jarred pasta sauce section at the grocery store to look for it. If anyone else is confused, I'm pretty sure the recipe is calling for canned clams in it's juice. I used Chicken of the Sea's brand of Chopped Clams and poured the whole thing in with the liquid. It was fabulous.

Outstanding Chicken Dinner

This is a delicious chicken recipe that my husband loved! I'm always looking for chicken recipes that aren't boring and this one for sure is a keeper. I sauteed 1 clove garlic and half an onion in 1 tbsp butter, 1 tbsp olive oil. I added the 8oz of chopped mushrooms to this. Instead of just topping the dish with the mushrooms, I mixed in my garlic, onion, mushroom mixture to the cream sauce and then poured it over the chicken. I left out the artichokes as well. The result was a wonderful flavor and a happy family. Thanks Christine!!

Chocolate Cavity Maker Cake

Yummy and easy to make! My husband is really picky about cake--doesn't like it much, but I took a chance and made this one for his birthday after reading the reviews. I served it with vanilla ice cream and he absolutely loved it!

Roquefort Pear Salad

Awesome salad! I admit I had moments of doubt as I taste-tested the dressing and put the salad together...but the result was a wonderful blend of complementary flavors. I was unsure of what kind of mustard to use...yellow, dijon? I tried a spicy brown mustard and it turned out great!
