Rory's Most Wonderful Corn Bread

First of all, I'm not a cook. In fact I have never baked any kind of bread but according to my wife I am now an expert! This was without doubt the best corn bread I had ever tasted. I didn't change any of the ingredients but I did add a tad more onions and an extra table spoon of cottage cheese. I used small curd cottage cheese. I didn't have an 8 x 8 baking pan so I put the mix in a muffin pan and made six corn bread muffins. I served the bread with corn beef and cabbage. Yummy!

Corned Beef and Cabbage II

I made this in the slow cooker and cooked on high for six hours. The meat was so tender you could eat with a fork. I forgot to add the parsley and the butter at the end and it was still perfect. Next time I'll add a little more onion.

Broiled Lobster Tails

This is the best way I've found to fix whole lobster tails. However, you have to be careful with the time of 5 to 10 minutes.... I used two 5 oz. tails and the broiling time was more like 12 to 15 minutes. Be sure to watch the time carefully. It's better to cook a minute or so longer than not cooking long enough. Lobster is my favorite food and this is my favorite way to prepare it!

Pickled Red Beet Eggs

I have never ate pickled eggs before so I have nothing to compare them to. I followed the recipe exactly and I REALLY like them! I never cared for plain hard boiled eggs but I really do like them pickled!

Brown Rice

My wife and I really enjoyed this. I did add one chopped up mushroom, otherwise, I made just like the recipe. Next time I would like to expermient with some additional seasonings. I thought it tasted even better the next day.

Baked Macaroni and Cheese I

Chicken Florentine Casserole

Excellent! This made a rookie like me look like I knew what I was doing. It was easy to make and very, very delecious. The only change I made was to use fresh spinach. Be careful not to over bake the chicken. If you use thin pieces of chicken breast, then check after 12 to 15 minutes to see if it is pink and the juices run clear. My wife loved this recipe!

Easy Strawberry Lemonade

Last evening we went to an expensive restaruant and had strawberry lemonaid and it tasted wonderful. Today I looked for a strwberry lemonade and found this recipe. It tasted exactly the same and for a fraction of the price. This became my favorite drink on a hot Summer day! Highly recomended!

Daddy's Fried Corn and Onions

I purchased six ears of corn for my wife and I. We both LOVE corn of the cob. This is the first corn of the season here in Washington state and wasn't as good as I had hoped. For our next meal, I tried this recipe and was really impressed with the taste... It taste better with this recipe than cooked on the cob!!

Egg Fried Rice

This was easy to fix, even for a rookie, and it's a treat for the taste buds. Instead of green beans, I used 1/2 cup of asparagus and 1/2 cup of Chineese snow peas. It's so good, it could be a meal in itself!

Asparagus Cashew Rice Pilaf

This is definately a five star dish. My wife kept saying how good it tasted. You won't be disapointed if you make this dish! The only thing I did differently was to add some Chineese snow peas. Excellent!

Fried Cabbage II

I can't imagine anyone not liking this. I made the cabbage exactly like written and it was excellent! I had never heard of fried cabbage before but found that it's better than boiled. It's easy to make and tasted great!

Special Deviled Eggs

This was one of the very first things I made after I retired. Deviled eggs is one of my favorite "finger foods". The horse radish sauce really makes this special and different. My wife was surprised that I could make deviled eggs that tasted so great! For one of my first attempts at cooking, I thought I did darn good!

Brown Sugar Meatloaf

Being a rookie cook, I've only made meat loaf a few different ways. I made this for my wife when she came home from work and she gave this recipe a rave review. Personally, I like this recipe as well as any meat loaf I've ever had wheather made by myself or anyone else. I gave it five stars!

Red-Skinned Garlic Mashed Potatoes

Probably the best mashed potatoes I've ever had. I didn't have regular garlic so I used a big slice of elephant garlic instead. I didn't want to take the time to bake the garlic so I put it in the microwave until it was soft (30 sec) then cut up into tiny pieces. I also put in a large tablespoon of horseradish sause to give it a little kick. Excellent!!

Italian Sausage Soup

Absolutely delecious!! I've made this countless times always with delecious results every time. Most of the time I make it withoug any additions but sometimes I'll add an onion and two small potatoes. I also use HOT Italian sausage for that extra zing.... Five star soup for a cold winter day!!!

Garlic Red Potatoes

Baked red potatoes are always a treat... but this recipe makes the best red potatoes I've ever tasted. I did use a little less butter than called for but still had plenty to coat the potatoes with the garlic. Thanks Laura, for a tastier way to bake red potatoes!
