Spinach Stuffed Portobello Mushrooms

Strawberry Spinach Salad I

Outstanding dressing, however a tad too sweet. Next time I'll use about half as much sugar.... The dressing and spinach combo make an excellent dinner salad!!!

Beer Batter Fish Made Great

Having been on my own and cooking for myself for the last ten or so years, I don't consider myself to still be a rookie cook. However, deep frying is something new. I fixed this without changes. The three stars is an overall average because... the taste was easily five star, however there was a heavy after taste of oil which I gave as three stars... the cleanup afterwards was a minus two stars. Do not put the fish in the deep fryer basket as I did. The batter stuck the fish to the bottom of the basket and and the fish was submerged in the oil so there was no need to turn the fish but when I tried to remove the fish from the basket it was stuck like glue. The batter was stuck solid to the basket and when I tried to remove the fish, the batter pealed off and was looked like it had become a permanent part of the basket. I spent almost an hour soaking and trying to remove the batter. So... do not use the basket to cook the fish. Just drop the fish into the oil and forget about the basket....

Italian Vegetable Soup

Excellent!!! However it does need more liquid so I added four cups of beef broth. It does make a LOT of soup... in fact, it fills a five and half quart dutch oven. I've made this three times already this winter. It's a healthy, delicious soup and I think everyone would enjoy on a cold winter day....

Ratatouille Soup

This is one of my favorite soups. I've made this without changes and it's excellent and I've made it with a few changes. Sometimes I'll add more veggies such as zucchini, bell peppers and 1/2 pound of hot Jimmy Dean sausage in addition to the hamburger. I also like to add a couple of hot peppers.... Just make without changes first, then next time add all the extra things you think will add to the flavor.... I've made this many, many times and I've never been disappointed!

Baked Ham

Ham can be really dry after a couple of hours in the oven but when fixed with the oven bag and a can of cola, the ham was moist and very tasty. The cola doesn't affect the flavor but it does keep the ham nice and juicy. And.... clean-up is a snap!!!

Oven Pot Roast

I fixed this last evening in my new cast iron dutch oven and I was impressed with the pot roast and with my new oven. I made this without changes but I did add my vegetables the last hour in the oven. It makes wonderful gravy and the roast was excellent.

Easy Caramelized Onion Pork Chops

I've fixed this recipe many times and it's five star as written. Over a period of time, I've made a few changes for my own personal preference. I always use beef or chicken broth instead of water and once I added some green peppers and put in when I add the onion and ever since then I've always make with onions and green peppers. Simmering for the twenty minutes or so makes the pork chops moist and delicious! Yummmmmmy....
