Tomato Cucumber Onion Salad

I actually didn't try this particular recipe, but I make something similar very often. I cut up the cucumber, tomatoes and red onion, then add red wine vinegar dressing..I believe it's wishbone, then add salt and pepper...delicious every time! ALWAYS add salt...it makes the cucumbers absorb the dressing...makes a hug difference!

The Best Thai Coconut Soup

There's another Thai soup on this site by Chef John that has similar ingredients to this one, but is much better in my opinion. First, I personally feel that the hard crunchy pieces of ginger and lemongrass take away from the soup. In the other recipe he simmer's them in the chicken broth then filters them into the main pot. There's also more lime, chicken thigh instead of shrimp, garlic and red onion, which adds much more flavor. Overall, this soup is ok, but the other spicy Thai from Chef John is better...check it out and try for yourself

Lobster Rolls

Ok, I haven't actually tried this recipe, but I wanted to write what I recently tried as I never made a lobster roll before and made these for my family. After looking at all the different recipes out there and sampling lobster rolls in many different restaurants, I found what I think, is by far the simplest abd best tasting lobster roll. Use lobster meat at room temperature and cut/rip into bite sized peices...I actually took the meat out of an 8 lb monster, but whatever size you like. Melt a fair amount of butter...I used a stick and a half...and allow it to cool. Add the juice of 1 lemon and mix. Now pour it over the meat and coat thoroughly. Now butter and toast potato rolls. Add the lobster and you are done! You're not taking away from the taste of the lobster meat at all and putting only what you would normally add to a whole lobster! It was really delicious, I highly recommend it!

Chef John's Sausage & Shrimp Jambalaya

I'm a big fan of Chef John and this dish is 1 more to add to the collection! I read a number of the reviews and tweeked it just a little. I used olive oil instead of butter and added a full 14.5oz can of diced tomatoes. I used regular hot sausage since that was all I had and cut up a chicken breast and added it 10 minutes before the end. I also added some hot sauce and cut up a small jalapeno pepper as I like a nice kick! I missed one of the reviews that said to bring the batch to a boil after adding the rice as this info is left out in the recipe description. Be sure to do this or it will take longer to cook. I left it for an additional 10-15 minutes. Really delicious and very simple!

Spicy Chicken Thai Soup

I have made this recipe probably 15x's and it gets better every time I make it! I didn't alter it at all except to add a large squirt of sirachi sauce at the end...I like it extra spicy! He mentions 1 lime in the ingredient list and 2 in the video...I used 2...the lime really helps to make the dish. Also, chop up and prepare all ingredients before you start simmering the chicken broth. It takes a little while to prepare it all!
