Lemon Cake

This is a VERY good cake! The frosting is amazing! On thing to note though...I baked it in a 9 X 13 pan for my daughter's birthday and it didn't puff up as much as I expected. In fact, I thought it had fallen. I was going to throw it out and make another but cut a piece out of the center first and saw it was fine. I'm SO glad I didn't throw it out because it was a BIG, BIG hit. Next time I'll be prepared! It's a VERY moist cake and super yummy! I'm looking for an excuse to make it again!

The Best Lemon Bars

WOW! Just made these and they are SO good. I did make a couple of adjustments based on other reviews. Here's what I did: I kept them in a 9 x 13 pan but greased it. I don't know if it was necessary but my bars didn't stick. I followed the crust directions but added a LITTLE bit of salt even though I used salted butter. I baked the crust just until it started to brown and then let cool completely. I did have to bake for a bit more than the 20 minutes in the recipe. For the filling I used 1/2 cup of fresh lemon juice. Two lemons would not have been very much but I used small lemons. I increased the flour to 1/3 cup to compensate for the extra lemon juice. I went to removed the bars after baking 20 minutes and the center seemed like it was not set at all so I baked for another 5. These set up nicely and the crust was perfect. They were still yummy the next day. I agree that they smell a bit eggy when they come out of the oven but don't taste that way at all, especially when cool. I can't wait to make them again!

Breakfast Pizza

Very tasty and you can add/substitute ingredients to taste. It doesn't seem like it's enough eggs when you put it all together but it's fine when it's all cooked. My family really liked it.

Truck-Stop Buttermilk Pancakes

Chicken Noodle Soup

This is a very good, quick recipe. I pretty much followed the recipe exactly except I added a bit more carrot and a bit less celery and probably a few more noodles. I will probably do the same next time except I'll likely add more carrots. I cut the carrots and celery up a bit more than in the picture included with the recipe but I didn't want my 6 year old to pick them out. I'll make this again!

Make Ahead French Toast

VERY tasty! I made this for my family on Christmas morning. Based on other reviews I only used 1/2 c milk and 3/4 c brown sugar. I also only put pecans on half. It tasted ALOT like pecan rolls. We all really liked it. It's pretty rich and sweet. I think it would be a great addition to a buffet or as part of a meal with less rich foods. I'm getting a craving just thinking about it! Thanks for the recipes!

Steak Soup

I thought this was VERY good. After reading the reviews I made a few changes...I added a T of Worcestershire sauce to the meat when it was cooking and about 1/3 cup of red wine when I added the broth. I cut the paste down to 3 ounces but I'm not sure I'd mind it with the whole 6 ounces called for. I also used sirloin instead of round steak and cooked it longer than the recipe states to ensure it was tender. I tasted it as it was cooking and was afraid it wasn't going to be very flavorful but it was and the flavors all went together very well. I think the wine added a lot. Will definitely be making this again.

Peanut Butter Cup Cookies

YUM! I made these today for a children's cookie exchange tomorrow and I know these will be a big hit. I added some Christmas sprinkles on top to give them a more festive look but otherwise followed the recipe exactly. My daughter LOVES them and I like that they look like they are much more difficult to make than they are. I didn't have any problem getting them out of the pan. Maybe because my mini muffin pan is a brand new non-stick one. I told a friend about them tonight and she has a friend who makes a variation of this cookie using chocolate chip dough instead of peanut butter. Something to try next time!

Charley's Slow Cooker Mexican Style Meat

This recipes is REALLY yummy. The meat was so tender and tasty. I followed the directions exactly and was a little worried because I'm kind of a whimp with spicy foods, though my husband cannot get enough spice. I kept tasting through out cooking and was worried it was going to be too spicy for me. When the meat was done I took in out of all the gravy it was in and shredded it and though there was some spice it wasn't too bad at all. I put some aside for myself and then added some of the gravy to my husbands which spiced it up for him. We ate it flour tortillas with the fixings. Definitly a new staple in my house!

Crayfish or Shrimp Pasta

This is a really tasty and easy recipe. I cut it down alot and make it for myself when my husband is out of town since he's not a seafood lover. It takes awhile for the cream sauce to reduce and sometimes I get impatient and don't let it reduce all the way but it's still tasty. I sprinkle grated parmesan on top and usually use whole wheat noodles (just because I don't eat a lot of white pasta). I think I might try this with chicken too for my husband. I highly recommed this one!

Great Garlic Bread

This is SO simple and so good. I have done all sorts of variations it's always great. I usually make a paste out of softened butter and the spices instead of melting it just because I think it's simpler. My family likes this best with some grated parmesan cheese mixed in with the butter but it's good without too.

Peach Muffins

Just finished making (and eating) these. WOW! Let me start my saying I love muffins but they never seem to work out for me the way I hope. The texture is never quite right But, these were excellent. The texture was perfect and the taste were spot on. I could see using these as a base with any fruit or even without fruit since the cinnamon gives them such a great taste. The batter was VERY thick and I was tempted to add milk as some reviewers suggested but I decided to just stick with the recipes as written. I'm glad I did! I used fresh peaches. I only had to cook mine 20 minutes and I'm glad I checked then because I think 25 would be too long. This recipe is a keeper!

Hot Chocolate Mix II

I made this for a Halloween party and thought it was very good. It makes ALOT! I added the chocolate pudding as some have suggested and found I still needed to use MUCH more mix than the recipe calls for to get a chocolatey cup of hot chocolate. It's much butter than the store bought. I didn't process it in the food processor as someone suggested and didn't have ANY problems with lumps. In fact, I'm shocked at how easily it dissolves in water. Good recipe. Will definitely make again to have on hand throughout the winter!

Apple Cake V

Oh my goodness is this good! After several field trips to apple orchards I had more apples than I knew what to do with. My 4 year old daughter wanted to make an apple cake. My mother had just made one a month or so ago that was really good but I just didn't have all the ingredients on hand so I went searching. I'm SO GLAD I found this recipe. This cake is SO moist and I didn't find it crumbly at all. The only change I made was adding a little cinnamon just because I like it. If I made it again I might decrease the amount of glaze a bit. I really like it but don't know if it needs it. I'd maybe make 1/2 - 3/4ths of it. It's rich and sweet and I think I ate 1/2 the cake yesterday. It's one of those things I keep cutting a little piece of and nibbling on. I can't resist. I like it with whipped cream and I like it cold the best. I noticed some reviewers left out some oil and then thought it was dry. There's really not a lot of moisture in this cake except for the oil and eggs. Also, I think the apples probably need to be chopped decently or it would make the cake crumbly. I'm off to have another piece now!

Apple Pie by Grandma Ople

SO GOOD! Just made this yesterday. We went apple picking and have a huge amount of Golden Delicious apples. I wanted to make an apple pie, but honestly, I just don't generally love apple pie. So, I was looking for one that was a little different. I followed the recipe exactly except we used our Golden Delicious apples instead of Granny Smith AND we added a tsp of cinnamon to the apples. My family really loves cinnamon. I ended up adding an extra apple too just to mound the pie a bit more. My apples were likely just a bit smaller than the one in the original recipe. I baked mine as directed and left it in the whole 45 minutes at 350 (I had to cover to avoid over browning) and my apples were perfectly done. Golden Delicious tend to stay firmish when baking though. I think this is now out new "go to" apple pie recipe. Thanks!!!

Sugar Cookie Icing

This icing made pretty, shiny cookies. It dried fairly fast which made decorating nice. My only complaint is the amount of liquid in this recipe is WAY off. There is no way the amount of milk it called for would have allowed me to make a smooth icing. I added a bit more milk and corn syrup until I got a consistency that I could work with.

Banana Cake VI

I thought this recipe was quite good, but not great. I think it tastes like banana bread (though with a more cake like texture) with cream cheese frosting. If that combination sounds like a good one to you, then give it a try. I had to cook the cake at least 1 1/2 hours and was concerned it would be dry around the edges but after the trip to the freezer it was still very moist.

Cowboy Bake Beans

I made these last night for a fall outdoor potluck. They are very good though I think they are a little too sweet. I thought a cup of brown sugar sounded like a lot but I figured I'd follow the recipe the first time I made it. Next time I'll probably start with a half cup and add to taste. I did get a lot of positive comments about the dish. Someone said it was good "comfort" food. One change I did make was to substitute black beans for the wax. I think any type of beans would work fine in this recipe.
