Sorry it took me awhile to post my pizza crust recipe!!! I thought I would also start to post some of my past recipes that I have used for the county fairs! I kinda thought it would be neat to share some winners with you!
Classic Pizza Crust
Makes 2 10 inch cast iron skillet deep dish pizzas
1 1/2 cups warm water
2 1/2 tsps. rapid rise yeast
2 teaspoons sugar
1 1/2 teaspoons salt
2 tablespoons olive oil
3 to 4 cups bread flour
olive oil, for drizzling
Grease the skillets with 1 tablespoon of olive oil. In a mixer bowl, hand whisk the water and yeast and let stand 2 to 3 minutes to dissolve the yeast. Using your dough hook, briskly work in the sugar, salt, olive oil and 2 cups of flour to make a soft mass.
Knead with the dough hook on lowest setting, dusting with additional flour as required to form a soft elastic dough about 5 to 8 minutes. Remove dough hook and spray a little non stick cooking spray on dough. Cover the bowl with a large clean dish towel.
Let dough rise until almost doubled, 45 to 90 minutes. Gently deflate dough and divide in two. Press dough into the skillets and coax them to fit nicely in! Preheat oven to 425 degrees. Proceed with your favorite toppings and Bake for 15 to 20 minutes or
until the edge is nice and golden brown!
