Super Crazy County Fair Time!!!

Well folks once again it is that time of year! County fair.....corndogs, funnel cakes, lemonade, spiral spuds, 4h food stand, and carnival rides! Boy have I had a crazy week to try to stuff to enter for the fair.  My father had a heart attack last weekend and ended up in the hospital all week. They won't be doing any surgery until the following week. But he is staying up there close to where he needs to be. Now my dad is one of those guys who doesn't go to the doctor for anything, he is never ever sick. Maybe the occasional cold, but never anything major. So it has been a huge shock to my brain to see him like this. On top of that, I had to deal with the health inspector showing up where I am the assistant manager at a grocery store. Then I have been taking my daughter down to the town where she will have to get her license so she was familar with the streets. The DMV is only open every other week there and this last Friday they were going to be open. She wanted to have her license so that this year she wouldn't have to ride the bus anymore. Well school starts the 18th, so I had this small window to work with!! Then I after taking her out driving, I was baking my assortment of things to enter in the fair! Then I am working at the library today, then at the store on Sunday, then my Dad's surgery on Monday!!! Thank God I am a praying woman because God  has had to help me deal with all the guilt from not being up at dad's side this whole time, and the migraines from all the stress I have been feeling. But things are going to be fine! I have to be positive! My daughter ended up passing her test yesterday, so watch out world!!! I entered all my fair food this morning and I talked to my momma and everyone is good up at the hospital! I always believe that God will not give you more than you can handle. And I wasn't going to even enter anything in the fair, but baking is very theraputic for me, and it helped destress me.  And what did I enter in the fair this year you ask?  
Well,   my mom's coffee cake ( she has made it for years and it is fantastic!), fudgy brownies, white chocolate cashew blondies, zucchini bread, pumpkin struesel muffins, gingerbread bread machine bread, buttermilk bread, whole wheat bread, challah bread, decadent chocolate cake, and a apple crumble pie! Everything really turned out well this year! My challah bread was absolutely gorgeous! I am very excited to find out how I did!!

I hope all turns out well with your dad's surgery. Your dad sounds a lot like mine, then he had a heart attack and open-heart surgery. He did everything they told him to do and I'm very happy to say he is back to riding his bike several times a week 3 miles each time. Rehab and diet change are very important - make your dad do those things. Congrats on your daughter's passing her test! And, last but not least, good luck with your baked goods at the fair! They all sound delicious.

Ahhh - STRESS! I am glad you took the time to bake - it is therapy. A teenager on the road! More stress. Yikes, what a big week you had. Who said life gets easier.... Hope your father makes a full recovery. :)

Wow, am I impressed! You must be some fantastic baker and it sounds like the judges will have their work cut out for them, for sure! Truly do hope all goes well for your Dad-cardiac stuff is such a SCARE, so be gentle with yourself. It really does take a while to get over the sheer shock so give time time. I hear ya- my 17 year old just got her license so it's nail biting time here, too. Just kidding- these young ladies will do just great. After all, we did !! Thanks for the enjoyable post, looking forward to reading more. Post fair results IMMEDIATELY so we can celebrate even here in New Jersey!!

Does anyone know if you can bake cupcakes or brownies in an ice cream bowl. I've baked cupcakes in a cone. Any suggestions.

About Me
I learned to cook watching my mom and my Grandma's cook - who all are the best in the world! I have huge garden and I can a lot of stuff for winter. My daughter would'nt dream of eating a pie that was store bought! And we raise chickens. There is nothing that compares to farm fresh eggs. They just make your baked goods taste better.

Comfort food! If it's fattening, chocolate or salty I'm in! I love to take leftovers and transform them into something wow!
My favorite family cooking traditions
My mom always made sugar cookies with us kids at Christmas time and do the same thing now! I used to love to pick out a recipe and Mom would let me got to town in the kitchen! At Christmas I also make tons of candy's, breads, and cookies that I give away to neighbors and family for gifts.
My cooking triumphs
I love to enter canned goods and baked goods in the county fair! I have won quite a few ribbons! I recently had a recipe published in Nebraska Life Magazine's cookbook. I was so excited.
My cooking tragedies
One time I tried to make pierogies when I was about 15. Well I didn't realize how much a cast iron skillet would smoke when it got hot! I ended up filling the house with a lovely smokey aroma! I never have made them again! Another time I tried to make chicken satay, and my husband and daughter about gagged when they tried the sauce. As they said peanut butter doesn't go with chicken! But I loved it. They were scraping the sauce off the chicken. They won't let me live that one down!
