Healing Cabbage Soup

Yummy! Of course, customized it to our family preferences but this recipe is a very good starting point. I sauteed up some bacon pieces with the onion and garlic. I added some celery and more spices. The bacon was very complementary since it added a nice smoky flavor to the soup.

Diced Lamb with Roasted Vegetables and Couscous

This dish was okay. It feels like it is missing something. I did add the yogurt to make a bit of a sauce. Not sure what else it needs - seasoning, crunch factor, something. The marinade for the lamb was good. The putting the dish together needs something more. Maybe a topping that adds some texture? I'm going to try and tweak it the next time around.

Pasta Pancetta

Made it per the recipe and it was good but I think next time I will spice it up a bit and maybe add some diced bell peppers to add some color and some cream to thicken up the the sauce. The pancetta was very tasty and my family enjoyed the recipe. Its a good base recipe to then personalize for your own family's preferences.

Homesteader Cornbread

This cornbread is a bit different than the kind I was raised eating. Much sweeter and more cake like than I am use to eating. My kids really enjoyed it. I used buttermilk instead of milk and used an iron skillet that was hot when I put in the batter (gives it a crisper crust). Good but I think I will follow the recommendation next time to switch the amounts of flour and cornmeal to give it more of a corn taste.

Butternut Squash Soup

I followed some of the other recommendations and roasted the squash first - makes it much easier. I used half and half in place of cream cheese. Making another batch of it today and I am going to try creme fraiche instead. My daughter loved the soup the first time I made it and is looking forward to having it today on Thanksgiving.

Pollo Mediterranean

Very good chicken dish. I agree with making more sauce for the pasta. I did not do the last step of adding the cornstarch. It was creamy after adding the sour cream and milk. I turned off the heat for a bit when adding the sour cream and milk since I didn't want it the sauce to curdle. After stirring the sour cream and milk in thoroughly I turned the heat onto warm and added the chicken back into the pan.

Pineapple Upside-Down Cake VII

Yummy! I asked my daughter to make me a pineapple upside down cake for Mother's Day and she did a great job picking and making this recipe. My mother made pineapple upside down cake when I was a kid and it wasn't this good! She used a white cake mix with crushed pineapple and it tasted great. We will definitely be making this again.

Blueberry Zucchini Bread

Yummy - kids and hubby loved it. I used one cup white sugar and 1 cup brown sugar. Plenty sweet might see about reducing it a tad. I made the two larger loaves and baked it for 1 hour 15 minutes. Next time will try reducing the oil using applesauce.

Irresistible Irish Soda Bread

I thought that I didn't like Irish Soda Bread. I remember having it in my youth and it being very dry. This bread was wonderful! My kids loved it. Thank you!
