No-Bake Oatmeal Protein Bites

This is a great base recipe that can be adjusted to your needs. I like pumpkin seeds in mine with raisin. The other thing I have added is a dash or two of salt and a few dashes of cayenne pepper to pop the falvour.

Pancetta-Wrapped Leek Gratin

I made these twice and both times they turn out awesome. And yes a nice piece or two of bread a glass of the wine you cooked with and everyone was in heaven. The secret is the quality of the ingredients. If you don't drink the white wine then don't cook with it. Use more stock instead of cheap bitter tasting wine. As for the left overs I used them on a own made pizza, little olive oil some garlic, the leeks spread around in byte size nuggets bit of cheese oh so delicious.

Chef John's Cottage Fries

These are amazing crowd favourites and great to make while cooking the burgers on the BBQ. Especially in Winter ;D Spice them up every which way you want. Avoid sugar base seasoning as it will burn before the potato does. I personally use the convection setting of my oven @ 400 degrees. This cooks them a little faster and crisper.

Clone of a Cinnabon

This is a great recipe. Make it the day before and once it is ready to bake place in fridge. pull it out in the morning and pop into the oven to have them fresh. yum.

Creamy Rice Pudding

This is a great and easy recipe. Like others i only used one sauce pan. I used cream instead of milk for a more decadent version. Added some cinnamon along with the vanilla. Yum.

Chef John's Boston Cream Pie

Well Since I did not follow the recipe (used "David's Yellow Cake" instead of box cake) I cannot give it a 5. But since this is mainly a techniques videos it is excellent and it turned out great. One note make sure to taste your ganash. Depending on the chocolate you use it may be too bitter for this, add some sugar and a dish of salt to your boiling cream to help boost the sweetness.

David's Yellow Cake

I this like a box cake? Heck no. But it is a fantastic scratch bake cake. Used it for a Boston Cream pie recipes and everyone loved it. Many asked what box recipe it was, and could hardly believe it was scratch bake. Make sure not to over bake. and keep a pie dish of water in the oven during baking to keep moisture. Now since there is a lot of left over egg whites simply freeze them in an ice cube tray. One cube to one egg. Great for future needs.

Amusement Park Cornbread

I made muffins out of them and they turned out very well. I can't give the recipe a 5 star because I modified it. First I did the 1 1/2 cups of ap flour and 1 1/2 cups corn meal. I also added 1/4 tsp of Mace. They are practically all gone before they were cooled. Making more now.

Chef John's Chocolate Mint Brownies

Chocolaty, dense and super moist. To make sure to get them moist do not bake by time. Set your timer 5 minutes less than recommended and check with a toothpick or bamboo skewer. Continue checking every minute or so until there is barely any batter on them. remove for oven immediately. They will continue to cook a little on the cooling rack. Meaning if they are perfect or cooked in the oven they will be over cooked when cooled. In this case not a moist brownie at all.

This is simply amazing. I did not have an oven safe skillet for this so i used a very deep dish pie plate pouring the sugar mixture into it. Worked very well. The dough may look thick but it will work out. A staple for sure.

These turned out very well. Not the same boring ham one would traditionally have. I did add the 2 tsp of liquid smoke as the video showed. This made the taste much better. One more thing to not is make sure to stir or rotate the chops every night so that they coat evenly in the brine.

Dark Chocolate Bacon Cupcakes

These were very good. To add a little more bacon flavour I substituted 1 tsp of bacon fatfrom the cooked bacon for 1 tsp of vegetable oil. Also used 1 tsp of the bacon fat in the butter frosting I made. They turned out perfect. Not to sweet.

Grandma's Lemon Meringue Pie

Very nice and very lemony just how I like it. For extra special use a butter crust instead of a pre-made. Make sure to blind bake it first. To twist it up use maple syrup or brown sugar instead of white sugar in the meringue. Subtle taste difference that helps.

Butter Flaky Pie Crust

A good every day crust. Replace a table spoon of water with a table spoon of cider vinegar to help make the crust flakier. The vinegar helps prevent gluten from forming.
