Sausage, Bacon, Apple and Cornbread Stuffing

I followed this recipe exactly and it was tasty. However next time, I will use sausage with a little more punch like andouille to add some spice. I made this recipe the day before Thanksgiving (minus adding the chicken broth) and it turned out the same as those that were made on the same day. I used up both cans of chicken broth.

Slow Cooker Tomato Chicken

I am so happy to have found this recipe because it is a good base to be creative and use up the remaining cans of tomatoes I had in the pantry. I used 5 chicken breasts, 3 cloves of garlic, 2 T soy sauce, 2-14oz cans of Stewed Tomatoes with Basil and Oregano, 1-14oz can of tomato sauce and 1-14 oz can of chicken broth. Placed frozen chicken breasts in the pot and poured all the other ingredients on top of it. Let it cook for 9 hours. On the 10th hour I added frozen peas and carrots. This version will be a little brothier (just how I like it) so reduce the chicken broth if you are using frozen chicken.

Kung Pao Chicken

Finally made this after fiance' asked many times. He is allergic to peanuts so I skipped it. A very good recipe that is very close to restaurant quality. I used dark toasted sesame oil because it was what I had. I think it will be better to use a light-colored sesame oil which I will do the next time.

White Chip Chocolate Cookies

This recipe has become a staple in my household. I switch between this recipe and another oatmeal chocolate chip kind on this website. I have frozen this dough as well and it comes out just as well, if not better because it is easier to handle. Enjoy!!

Pumpkin Sheet Cake

Made the recipe exactly as stated and it turned out very tasty especially when chilled. A great alternative to Pumpkin Pie. Will be making this again for Thanksgiving Dinner.

The Big Easy Jambalaya

I could not find the Zatarain's mix anywhere. I checked 3 supermarkets with no luck. I had all the other ingredients so I had to find a way to use it. I found a jambalaya mix recipe online but it called for dried ingredients. I made changes to that recipe by using fresh ingredients, then i incorporated it with this recipe and despite the numerous changes, it was fairly easy. I had no idea Jambalaya was so simple to make. This will be in my monthly rotation.

Spaghetti With Red Clam Sauce

Added 1/2 cup leftover red wine, 10 oz can whole baby clams and 1 tsp red pepper flakes, otherwise followed recipe as is. Excellent flavor! The addition of capers and red wine got it very close to restaurant quality. Will make this again!

Jalapeno Cranberry Sauce

This was okay initially, but the longer it sat in the fridge the better it got. Like the others, I let the sauce cook for a little bit to kill the alcohol from the sherry. I guess I didn't cook long enough because it took a while for the flavor to die. But once it did, it was very tasty. I used this as a side for Cajun-style Turducken and leftovers to fill corn muffins.

Frozen Chocolate Chip Cookie Dough Balls

These are so easy to make and taste exactly like the dough sold at supermarkets. The hardest part is clearing freezer space for the little balls. I made a couple of changes: used 3/4 cups white sugar+ 3/4 cups brown sugar instead of 1.5 cups brown sugar, and added 1/4 tsp salt. This recipes made about 24 walnut-sized balls.

Baked Scalloped Potatoes

I use this recipe as a guideline for the cooking time but have made quite a few changes. First I peel, then slice 4 medium-szied potatoes as thin as I can. I put a layer down on a casserole dish, season with salt and pepper, then top it with onions. I then mix together 2 cups of milk and 2 cans of cream of cheese soup (Nacho Cheese soup works too!). Then I pour the soup on top to cover. I repeat the layers until I use up all the potatoes. I can usually do one potatoe per layer. I cook covered for 1 hour, remove the cover and cook for another 30 minutes. Cooking time varies on how thinly you can slice the potatoes. Make sure to put the casserole dish on a foil-lined cookie tray to catch any boil overs.

Impossibly Easy Cheeseburger Pie

This is very easy to make and tasty. I cooked my ground beef with onions and garlic. I added worcstershire sauce and seasoned salt for taste. I intended to add a layer of ketchup between the beef and the cheese but forgot. I think it would've added to it. Otherwise, it is very easy and tasty.

Black Bottom Cupcakes II

Followed this recipe to the T and it was excellent.I wanted to use coffee instead of water like the others but couldn't since I don't drink it and don't have any laying around. It is even better 2-3 days after. The cupcakes stay moist and the cheesecake topping eliminates the need for frosting. This one is a keeper.
