Quick and Easy Chicken

Made this exactly as written and it was good. A little too sweet for my taste so next time I will cut down on the sugar, but a good twist to chicken that I will definitely use again.

Shoyu Chicken

Made this exactly as written and it was very good marinated on bone-in skin-on chicken thighs. Our grill wasn't working so I baked it in the oven at 350 degrees for 45 minutes, then switched to broil for 3 minutes. My fiance' said it tasted better the next day after the flavor has had a chance to sit.

Spaghetti With Red Clam Sauce

Added 1/2 cup leftover red wine, 10 oz can whole baby clams and 1 tsp red pepper flakes, otherwise followed recipe as is. Excellent flavor! The addition of capers and red wine got it very close to restaurant quality. Will make this again!

Mama's Asian Chicken and Rice

This was my first time using 5-spice powder and although it made the recipe very authentic in flavor, next time I will use less 5-spice powder. Otherwise the recipe was tasty.

Braised Balsamic Chicken

This recipe made my fiance' hungry while it was simmering on the stove. It has a great aroma and went well with the Brown Rice recipe also from this website. This will be added to my monthly rotation.

Slow Cooker Chicken Cacciatore

I made these using frozen chicken breasts and cooked for 9 hours. So easy and tasty especially the next day when flavors have melded with the noodles. Definitely a keeper!

Salsa Chicken Rice Casserole

I did not follow the recipe exactly: boiled the chicken with onion, garlic and seasoned salt, used the chicken stock to cook the rice and added diced green chilies, canned corn (drained) and diced tomatoes with jalapenos to the rice. Otherwise, followed the recipe and it was very tasty. I will definitely make this again!

Shrimp and Okra Gumbo

I made this for my fiance' who loves okra. I made it exactly with the exception of using pre-cooked, tail-removed frozen shrimp from Costco. It turned out just as well and was better the next day after the flavors have melded together and the soup was given time to thicken up.

Chocolate Sheet Cake III

This really does taste like Mexican Hot Chocolate in cake form because of the cinnamon. It is not a chocolate-chocolatey cake but the frosting makes up for it. The cake got denser the longer it sat and since the frosting is more like glaze, my fiance' likens it to cake doughnuts. I agree with him!

Colleen's Slow Cooker Jambalaya

This recipe is now on a monthly rotation at home. Quick and easy to mix-up the night before, plug in on the day, then come home to the appetizing smell of fresh jambalaya! I have made this with and without shrimp (depending on how long I can wait before I dig in) and it tastes good either way. I do like the soupy consistency of this recipe. The rice I eat it with, soaks up all the juice!

Creole Okra

My boyfriend loves okra so I buy the frozen kind everytime it is on sale. I pair this recipe with the Seared Catfish from this site. It goes perfect with it. This recipe also goes well with zucchini.

Sausage, Bacon, Apple and Cornbread Stuffing

I followed this recipe exactly and it was tasty. However next time, I will use sausage with a little more punch like andouille to add some spice. I made this recipe the day before Thanksgiving (minus adding the chicken broth) and it turned out the same as those that were made on the same day. I used up both cans of chicken broth.

Baked Scalloped Potatoes

I use this recipe as a guideline for the cooking time but have made quite a few changes. First I peel, then slice 4 medium-szied potatoes as thin as I can. I put a layer down on a casserole dish, season with salt and pepper, then top it with onions. I then mix together 2 cups of milk and 2 cans of cream of cheese soup (Nacho Cheese soup works too!). Then I pour the soup on top to cover. I repeat the layers until I use up all the potatoes. I can usually do one potatoe per layer. I cook covered for 1 hour, remove the cover and cook for another 30 minutes. Cooking time varies on how thinly you can slice the potatoes. Make sure to put the casserole dish on a foil-lined cookie tray to catch any boil overs.

Cajun Corn and Bacon Maque Choux

I made this recipe for Thanksgiving to accompany our Cajun Turducken. My guests loved it and the recipe has become a staple at home (minus the bacon because I consider it a treat). It is so easy to make and tastes so yummy. I too use canned corn soaked in milk. When I use bacon, I saute all of the veggies in the bacon grease instead of the vegetable oil for extra flavor.

Pumpkin Chocolate Chip Cookies III

This is a fall staple at home. Like others have mentioned, these cookies are very cakey but taste excellent. Because of the texture, they don't keep as well as other cookies, but they will be gone quicker too.
