Rhubarb Stir Cake

This recipe is the best way to eat rhubarb. I can't stand rhubarb but we have a ton of it in the garden and my husband is always asking for it. I found this recipe and am so happy that I decided to try it. I did cut back a little on the rhubard and added strawberries from the garden just to get rid of them. I will keep making with just rhubarb after the berries quit. This is so good!

Fish Tacos

I followed the recipe for the white sauce exactly and used frozen battered fish. I used homemade wheat flour tortillas instead of corn and some salsa that I dressed up with lime, extra onion and jalapeno. I am not usually a fan of spicy, but these were awesome. I will be making these on a regular basis.

Mexican Whole Wheat Flour Tortillas

I have made these several times now and have been very happy. I will never buy tortillas again. It is so nice knowing exactly what you are eating. I made them again today and decided that tomorrow I am going to buy a tortilla press....that way we can have them more often!

Classic Fish and Chips

I thought this was very good. I put the pieces that are done on a platter in the oven set at 200...this keeps them from getting soggy while I continue frying. I also had much batter left over to make onion rings.

Cindi's Egg Rolls

I'm sorry but these were not to our taste at all. I had a strange feeling about adding green pepper and should've left them out. I like peppers, but don't think they belonged here. Nobody would eat these, we had to order pizza.

Baked Zucchini Chips

I was looking for something different to do with zucchini and found this recipe. I was raised eating zucchini this way and up until recently it was the only way I would eat it. I agree with other reviewers that thin sliced zucchini is the best. And while of course it is healthier to bake it, it is really good fried too!

Good 100% Whole Wheat Bread

I just made this and and it was really good. It didn't raise as much as I would have liked, but I don't always have the best luck. It did taste great and wasn't as heavy as other wheat breads that I have tried. I used olive oil and 1/4 cup honey in place of the sugar and added some wheat gluten. I always use my machine to mix dough and then bake in the oven. I will definitely try this one again.

Easy Vegan Whole Grain Pancakes

I made with only whole wheat flour and skim milk. Like another reviewer I did cut back on the liquid. I made a double batch and cut back almost 1/4 cup of liquid. I used the cinnamon and vanilla and these were delicious. I found these when I was looking for something to make without eggs because we are all out. I saved this and it will be our standard pancake recipe. Even my five year old ate them and he is picky. Thank you for posting.

Butternut Squash Fries

I really enjoyed these. My husband thought they were okay and my 5 year old didn't like them. I like a previous reviewer added cinammon, nutmeg and ginger and tossed them with a little olive oil and salt and pepper. I will definitely make these again.

Gina's Lemon Pepper Chicken

I thought this was really good. I did brown the chicken in a small amount of olive oil before baking. I then poured a little lemon juice over it and then baked. I also left off the onion powder because I couldn't find it. I don't know why some others thought it was bland. I thought it had just the right amount of flavor....of course, I like my meat to taste like meat. What would be the point otherwise?

Pasta With Tuna Sauce

I had my doubts about trying this, but we are trying to eat healthier, so I am expanding my horizons. This was pretty good. I followed the recipe except for the capers and even my picky husband ate it, but my five year old wouldn't. I will make it again.

Easy Hummus

I have never eaten hummus before, so I decided to try it. This is really good. I added a touch of sesame oil and a little more lemon juice and I am addicted to this. I did leave out the fresh garlic and put in a tiny bit of garlic powder since I am not a big garlic eater. I tried is on chips, crackers and veggies and it was good with all. This is going to be a staple in our house. Thank you.

Pasta Primavera with Italian Turkey Sausage

This was excellent. I used canned tomatoes because that's all I had. I also added fresh broccoli and used whole wheat pasta. I left out the bouillon because of the sodium. I drizzled a little extra virgin olive oil on at the end. I will definitely make this again.

Boston Baked Beans

These were good. I used great northern beans because that's what I had. I tried to put them in the crock pot but didn't cook them long enough so they were a little tough. I will bake as instructed next time. I had never had beans with molasses before and I think I may prefer them without it. I will try again with and without. They did smell wonderful while they were cooking. It's nice to have homemade instead of from a can. Thanks

Easy Chicken Enchiladas

These were really good. I did modify a little bit. I used about 5 ounces of cream cheese and I had a little extra chicken and salsa and about 2 cups of rice. I didn't have pinto beans, so I used a can of black beans. I threw in some cumin and like others, used enchilada sauce. I think that the full amount of cream cheese would be too much. I will definitely make these again.

Honey Mustard Chicken

I used boneless breasts and didn't have time to marinate, so I seasoned as directed then browned in a skillet then poured the sauce over and baked. I didn't have the apricot jam, but would like to try it again with it. Although, I am afraid to change anything because my picky picky husband said it was delicious...a word that I didn't know was in his vocabulary! This definitely will be in the rotation. Thanks

Spiced Pecans

I used about four cups of pecans and went a tad light with the cloves. They are so good. I made a second batch with walnuts and used part brown sugar and I enjoyed them even more. I will make these again and again.
