Cream Cheese Frosting II

Amazing. I cut back a little bit on the sugar and used half light and half fat free cream cheese and it turned out really good. This one is definitely a keeper.

Luscious Buttercream Frosting

Just like you would get at a bakery. I made it twice this week. The first time I followed the recipe exactly and thought it was a bit grainy at first, but it didn't remain that way. Once it set up on the cake, it was fine. Today I made it again and used less sugar, probably about 2.5 cups because that's all I had and it turned out fine. I had no problems with it being runny and no problems spreading it. I'm sure I will use this again and again.

Dark Chocolate Cake I

I screwed up and forgot the vanilla and it was still pretty good. I loved the texture, it was fluffy and moist. I can't wait to make it again and this time add vanilla. I also used butter cream frosting but will use chocolate next time.

Fluffy Whole Wheat Biscuits

Very good and easy. I used olive oil instead of butter and made drop biscuits instead of rolling them out because my kitchen was already chaotic. I will make these often. Thanks for a great recipe.

English Roast Beef

I liked the flavor of this. Mine was a little dry, but my roast was smaller, so I think I just overcooked it. For the gravy, I might leave out the sage and mint and just use the juices from the meat. I also just used the pot I cooked the meat in for the gravy...I just added the cold water mixed with flour to the juices. As long as the heat is off, you shouldn't get lumps. Turn the flame on after you add the liquid. I will make this one again.

Kafta (BBQ)

Yum. I was going to make these into meatballs to serve with spaghetti squash but made burgers on the george foreman. This is the only time in my life that I ate a burger with no ketchup or cheese. It was great plain. I may cut down on the cayenne next time for my son, but for us it was great. Thanks.

Creamy Rice Pudding

Good stuff. I used less sugar, skim milk and added cinnamon and nutmeg. I accidentally left out the vanilla and butter and it was excellent. I will leave out the raisins next time because I didn't care for them.

Jif® Peanut Butter Granola

This is delicious! I didn't follow exactly because I didn't have peanuts or figs, and I added wheat germ and flax seed. This will be something that I keep on hand from now on. I will try as written next time. I think you can play around with this one and have amazing results.

Oregon Salmon Patties

These were amazing. I had salmon in pouch so there was no liquid so I added a little milk with the egg. I didn't have dry mustard so I added a little dijon mustard and dipped the patties in panko bread crumbs with old bay seasoning since I didn't have that many crackers. I thought the mixture was too wet, but they cooked up fine. I cooked the onion in pam spray and also used pam to fry the patties for health reasons...amazing. I will make these often.

World's Best Lasagna

I have not tried this particular recipe. I make my sauce a little different but other than that, this is how I have always made mine. Beef and sausage....yum. I just have two small tips: to save time, I mix the parmesan and shredded mozzarella cheeses into the ricotta mixture saving some plain mozzarella for the top. I also put a little sauce without meat on top of the last layer of noodles and then put cheese. I saw a previous reviewer said the top was crispy, that will prevent crispiness. I may try John's recipe for sauce for a change. Nothing beats a good lasagna.

Whole-Wheat Chocolate Chip Cookies

These were suprisingly good for whole wheat. I didn't use any white flour but I may next time. I also accidentally left out the nuts and I definitely will next time. These are the first chocolate chip cookies that I have ever made that didn't go flat. This is a keeper.

Spiced Pecans

I used about four cups of pecans and went a tad light with the cloves. They are so good. I made a second batch with walnuts and used part brown sugar and I enjoyed them even more. I will make these again and again.

Honey Mustard Chicken

I used boneless breasts and didn't have time to marinate, so I seasoned as directed then browned in a skillet then poured the sauce over and baked. I didn't have the apricot jam, but would like to try it again with it. Although, I am afraid to change anything because my picky picky husband said it was delicious...a word that I didn't know was in his vocabulary! This definitely will be in the rotation. Thanks

Easy Chicken Enchiladas

These were really good. I did modify a little bit. I used about 5 ounces of cream cheese and I had a little extra chicken and salsa and about 2 cups of rice. I didn't have pinto beans, so I used a can of black beans. I threw in some cumin and like others, used enchilada sauce. I think that the full amount of cream cheese would be too much. I will definitely make these again.

Boston Baked Beans

These were good. I used great northern beans because that's what I had. I tried to put them in the crock pot but didn't cook them long enough so they were a little tough. I will bake as instructed next time. I had never had beans with molasses before and I think I may prefer them without it. I will try again with and without. They did smell wonderful while they were cooking. It's nice to have homemade instead of from a can. Thanks

Pasta Primavera with Italian Turkey Sausage

This was excellent. I used canned tomatoes because that's all I had. I also added fresh broccoli and used whole wheat pasta. I left out the bouillon because of the sodium. I drizzled a little extra virgin olive oil on at the end. I will definitely make this again.
